Okra Green Chili
Last Sunday I realized that there were lots of green vegetables in my fridge.
That made me happy and also gave me an inspiration to make a “green” dish with them.
I had beautiful okra and green peppers I had gotten from the farmers market the day before and I also had some tomatillos from making corn/black bean salad for the potluck lunch we had at work the previous week.
I had several ideas but I thought chili would be perfect because I could have a big batch so that I wouldn’t have to cook after work this busy week.
This was my first time to add okra to chili, but I absolutely loved it!!
This is a vegan chili so there is no meat in it, but the okra gives such a unique and interesting texture and I didn’t miss meat at all!
canola oil
2 cloves garlic, chopped
2 onions, chopped
1 green pepper, chopped
1 cup chopped fresh okra
1/2 can great northern beans, drained
4~5 tomatillos, chopped
5~8 slices pickled jalapeno from jar, chopped
water
2 vegetable base cubes
2 teaspoons cumin
dry oregano
1 tablespoon sugar
salt and pepper
sour cream (optional)
chili powder
chopped cilantro
1. Sautee garlic and onion in oil.
2. Add green pepper and okra and continue to cook.
3. Add beans, tomatillos, and jalapeno. Add water to just cover the vegetables and beans. Boil and then turn to a low heat.
4. Add vegetable base cubes, cumin, oregano, and sugar. Salt and pepper.
5. Serve with sour cream (optional) and cilantro. Sprinkle chili powder.
オクラ入りグリーンチリ
冷蔵庫をのぞくと、緑のものがいっぱい!
緑色のトマトみたいなトマテイーヨもあるし、ファーマーズマーケットで見つけた新鮮オクラもグリーンペッパーあるし、
何か緑のものを作りたい!という思いで出来たのがコレ!
チリコンカーンの緑版です。
チリコンカーンと呼ぶのに躊躇したのは、そのままの意味だと肉入り、となるので。。。
大好きなオクラが入ってと~っても満足な出来上がり。
オクラは普段は嫌がるテリーも美味しい、と食べてくれました。
ランチに食べた後、夕食にもまた食べたい、と言ってくれるのはほめ言葉ですよね~。
