Antipasto Sandwich
Since we had some leftover cold cut meat, cheese, and roasted vegetables from our open house, I made this sandwich the next day.
I was thinking of naming this “after-party leftover sandwich”, but the sandwich turned out to look and taste so fabulous that I hesitated to use the word, “leftover”.
So I re-named this “antipasto sandwich”.
This makes a wonderful lunch when served with a glass of wine!
4~6 inch long baguette, cut in half
1 tablespoon Boursin
a few slices of cold cuts
a few slices of sliced cheese
1/2 cup roasted or grilled vegetables
mustard dressing
– 1 tablespoon white vinegar
– 1 tablespoon sugar
– 1/2 canola oil
– 1 teaspoon Dijon mustard
– salt and pepper
1~2 basil leaves, chopped
1. Spread Boursin on bread.
2. Place cheese, cold cuts, and vegetables.
3. Make dressing. Combine all the ingredients.
4. Drizzle about 1 teaspoon of dressing.
5. Sprinkle basil.
アンティパストサンドイッチ
2週間ほど前にオープンハウスといって、ホームパーティーをした時に、
近くのイタリアンマーケットで購入したコールドカット(イタリアンローストビーフ、サラミ・ハムっぽいもの等)にチーズ、
そして、自分でいろいろ野菜をローストしたもので、アンティパストプレートを作ったのですが、
パーティーの後に残ったもので、こんなサンドイッチを作りました(作ったのはパーティー後すぐ次の日ぐらいね)。
ハーブとニンニクの入ったBoursinというフランスの柔らかいチーズをバゲットに塗ったら、
そこに、好みでいろいろミート、チーズ、そして、ローストした野菜をのせていくだけ。
仕上げに、マスタードドレッシングをたらっとかけてバジルを散らしたら出来上がり~。
“パーティー後残り物サンドイッチ”、と本気で名付けようと思っていたのですが、あまりに美味しくできたので、
残り物、と呼ぶのに気が引けて、アンティパストサンドイッチと、改名しました(笑)。
