Asian Salmon Rice Bowl
Terry and I had fantastic chicken wings at the Union when we were visiting downtown Minneapolis a few weeks ago.
It was one of their happy hour dishes, and I was so glad that we got there at 5:50; their happy hour was until 6 p.m. I know it was close!
Their Asian chicken wings were served with sweet teriyaki sauce with fresh cilantro and mint, and they were so good. We were licking our fingers long after the wings were all gone!
Initially I couldn’t pinpoint what it was, but the mint flavor was so unexpected and it made the wings so unique and tasty.
My Asian Salmon Rice Bowl was inspired by this dish, and the fresh mint leaves really enhanced the whole flavor of this bowl.
cooked white rice
teriyaki salmon
– cooked salmon (1/2 ~ 1/3 lb bite-size salmon, salt, pepper, corn starch)
– teriyaki sauce (canola oil, chopped 1 clove garlic, 1 teaspoon chopped ginger, 2 tablespoons soy sauce, 1~2 tablespoon sugar, salt, pepper, freshly chopped mint and cilantro)
pickled kohlrabi
– 2 kohlrabi, sliced
– 1/4 cup white vinegar
– 1/4 cup sugar
– 1 teaspoon black pepper
– 1 bay leaf
sauteed Chinese broccoli
– canola oil
– Chinese broccoli, cut into bite-size pieces
– salt and pepper
1. Salt and pepper salmon. Coat them with corn starch.
2. Make teriyaki sauce. Cook garlic and ginger in oil. Add soy sauce, sugar, salt, and pepper. Continue to cook until it thickens. Coat salmon with the sauce and herbs.
3. Make kohlrabi pickles. Combine all the ingredients. Let them refrigerate overnight or for a few days.
4. Sautee Chinese broccoli.
5. Put cooked white rice in a bowl. Place teriyaki salmon, pickled kohlrabi, and sauteed Chinese broccoli.
アジア風サーモン丼
先日ユニオンというレストランのハッピーアワーで出てきたアジア風チキンウイングに、ミントの葉っぱが絡めてあったのが美味しくって、
それをアイデアに、こんな丼を作ってみました。
サーモンは照り焼き風な味付けなのですが、仕上げに、香菜とミントをたっぷり散らしました。
いつものように、野菜をのせるのも忘れずに。
今回は、コルラビというカブのような野菜のピクルスと、チャイニーズブロッコリというアスパラとブロッコリのあいのこみたいな野菜をいためたもの。
すっごく美味しくって。
やっぱり丼ものは好き。
ちなみに、この丼、地元の陶芸家(アメリカ人)作なのですが、とっても和な感じですよね。
微妙な色あいといいごつごつっとした焼き上がりといい、一目で気に入ったもの。
ちょっと見難いのですが、すらっとスマートな立ち上がりです。
