Lemon Rosemary Bread
I was thinking about making bread with this lemon rosemary combo for a while.
So when I finally got a beautiful rosemary plant from the local farmers’ market the other day, I couldn’t wait to get started.
I couldn’t decide if I wanted to make a loaf or rolls, so I decided to make both.
The rolls are delicious when served with butter and my favorite honey, “extra virgin honey” I bought at the local farmers’ market (the vendor’s site is here, although I could not find this particular honey on the site when I checked).
The loaf is perfect for making roasted vegetable sandwiches or cheese and arugula sandwiches.
3/4 tablespoon dry yeast
3/4 teaspoon salt
1 tablespoon chopped rosemary
zest from 2 lemons
3 cups all purpose flour
1. Put warm water in a large container.
2. Add yeast and salt, and mix well.
3. Add rosemary, lemon zest, and flour. Mix well with a wooden spoon.
4. Cover with a lid (not airtight) and let it rise in a container until it’s double in size, for about two hours.
5. Refrigerate overnight.
6. Form a large round loaf, and five small rolls. Let them rise for 40 minutes.
7. Preheat oven with a pizza stone and a broiler pan inside to 450 F twenty minutes before baking.
8. Slash a line in the middle of the top with a sharp knife. Put the loaf and rolls on the pizza stone. Put a cup of hot water into the broiler pan.
9. Bake small rolls for 25 minutes. Bake the loaf for 30 minutes.
