Spaghetti in Mushroom Paprika Soup
You don’t see this type of dish much in the U.S., but “soup pasta” (usually long pasta in soup) is a popular dish in Japan.
I think Japanese people like to eat long noodles in soup in general. You know they have soba, udon, ramen, and more…
On the other hand, Terry prefers short pasta. Whenever I serve spaghetti, he uses a knife and a fork and cut all the noodle into small bite-sized pieces.
I don’t understand this because I think wrapping spaghetti around the fork while twirling it is one of the fun things about eating pasta. I used to ask my mom to make spaghetti just because I could do the fork-twirling (lol)!
I haven’t had soup pasta for a long time, and I decided to make one for lunch last weekend.
Yum! I love soup pasta. I should definitely make it more often.
Paprika is one of my favorite spices. It gives a nice depth in the flavor but it doesn’t make the dish too spicy.
2 cloves garlic, chopped
1 onion, chopped
16 oz mushrooms, chopped
2 tablespoons tomato paste
1 cup water
1 vegetable soup base cube
2 bay leaves
1 tablespoon sugar
1/2 teaspoon paprika
1/2 cup heavy cream
salt and pepper
400 g cooked pasta
fresh herbs
1. Cook garlic and onion in olive oil.
2. Add mushrooms. Cook for a few more minutes.
3. Add tomato paste, water, and bay leaves. Boil and then turn to a low heat.
4. Add soup base, sugar, and paprika.
5. Add heavy cream. Salt and pepper.
6. Put the soup and cooked spaghetti in a bowl. Serve with fresh herbs, such as parsley and thyme.
マッシュルームパプリカスープパスタ
久しぶりにスープパスタ。
いっつも思うんだけれど、スープパスタ?それとも、パスタスープ?
パスタスープっていうと、パスタが具の一部としてちょっぴり入ったスープ、とイメージが勝手にあるので、これはスープパスタと呼びますね~。
私はパスタ、っていうと、こういう長いパスタが大好きなのですが、
テリーは、ショートパスタ派。
こういう長いパスタを出すと、フォークとナイフを器用に使って、4~5センチの長さに全部切ってから食べてます(笑)。
私は、あの長い麺をフォークでくるくるっと巻くのが楽しみの一つでもあるのですけどね~。
パプリカをたっぷり利かせたスープと一緒に食べるパスタ、とっても美味しかったです。
パプリカは辛すぎるということなく、いい風味を出してくれますね。
