Herbed Roasted Potato
The finger potato season has arrived!
When I find these beautiful finger potatoes at the grocery store, I always want to take a big bag home with me and roast them.
They are tasty when you eat them with ketchup, but once in a while I get in a mood where I want to dress them up a little bit.
These herbed roasted potatoes are super tasty.
The herbs really brighten up the flavor.
I used parsley, cilantro, and scallion this time, but go ahead and experiment! You can basically use any herbs you like.
Herbed Roasted Potato
1.5 lbs finger potatoes
olive oil
salt and pepper
dressing
– 2 tablespoons white vinegar
– 1 – 1.5 tablespoons sugar
– 1 tablespoon Dijon mustard
– salt and pepper
1 cup fresh herbs chopped (I used parsley, green onion, cilantro; other suggestions – basil, mint, tarragon, dill)
1. Preheat oven to 425F.
2. Cut potatoes into quarters.
3. Coat potatoes with olive oil. Sprinkle salt and pepper.
4. Roast potatoes for about 20 minutes.
5. Make dressing. Mix all the ingredients well.
6. Combine potatoes, dressing, and herbs.
ハーブたっぷりローストポテト
この時期、フィンガーポテトと呼ばれる小さいポテトが出回ります。
フィンガー、という通り、指みたいな細長いもの。
洗ってしっかり水気を切ったら、オリーブオイルを表面に塗って塩コショウ、そして、高温オーブンで焼きます。
これだけでも美味しいのですが、今回は、ビネガードレッシングを回しかけたあとハーブをたっぷりまぶしていただきました。
ハーブは何でもいいのですが、小ねぎ、香菜、パセリ、ミント、バジル、青紫蘇、タラゴン、ディルなどがお勧め。
マヨネーズあえのポテトサラダを嫌がるテリー、ポテトはどうしてもビネガー系とあえることが多くなりますね~。
これは、ハーブたっぷりということもあって、夏にぴったり、もりもり食べられます。
もちろん、きんきんに冷やしたビールとの相性もばっちり。
