Miso Sesame Tofu Kimchi Rice Bowl
Nothing fancy, but it’s Monday. This is a good way to start the week, if you ask me.
I microwave tofu first (to get extra moisture out of tofu), flour and fry it before coating with sweet miso sauce. This process takes extra 8 minutes, but it gives the tofu nice crunchiness and lets it be coated with the sauce nicely.
1/4 ~ 1/3 package extra firm tofu (sliced into four sticks)
1/4 cup flour
canola oil (for frying)
miso sauce
– 1 teaspoon dark miso
– 2 tablespoons sherry
– 1 tablespoon sugar
– 1 tablespoon soy sauce
corn starch + water (for thickening)
black sesame (for sprinkling)
kimchi
cucumber cut into julienne strips and salted
cooked white rice
scallion chopped
1. Microwave tofu.
2. Flour and fry in canola oil
3. Combine all the miso sauce ingredients in a pan, cook over high heat and then reduce the heat to medium.
4. Thicken the sauce with corn starch/water mixture.
5. Add the fried tofu to the pan and coat it with sauce.
6. Sprinkle sesame seeds.
7. Serve the tofu sticks, kimchi, and salted cucumber over cooked rice.
8. Sprinkle chopped scallion.
Plant based?: 98% yes. 2%: fish sauce in kimchi.

味噌ごま豆腐キムチ丼
四角く切ることが多い豆腐。
なのですが、今回、ちょっと長めに、スティック状に切ってみました。
って言うより、四角く切った残りがこんな風に残っただけだったりして~(笑)。
ちょっと見にくいのですが、小麦粉をつけてさっと揚げて、表面をかりっとさせてから、
とろみをつけた味噌だれに絡ませてます。
キムチと塩きゅうりを豆腐と共にのせて出来上がり~!
これに、味噌汁があれば、おおご馳走~。
月曜日ということもあって、途中で力尽きて、今日は味噌汁ナシ。。。
んでも、これだけでも、満足なのでした。
まだ豆腐、少し残ってるのよね~。
明日の夕飯も豆腐丼になりそうな予感。。。
