Orange Ricotta Pancakes
Since I had some ricotta cheese left from making these rolls, I decided to use it for breakfast. I just love the combination of ricotta cheese and orange. So I was very happy with these pancakes as well. These pancakes are moist but light and fluffy at the same time. I highly recommend this recipe. (I used orange peel in place of lemon zest.)

リコッタチーズ入りのパンケーキは人気があるのですが、自分で作ったのは初めてかも?
先日パンを作った時に使ったリコッタチーズがあまっていたので、それを使って作ってみました。
今回も同じ組み合わせ、リコッタチーズとオレンジ風味です。
この組み合わせ大好き!
パンケーキもとっても美味でした。
リコッタチーズが入ることで、しっとりしながら、それでいて、軽くふわっと焼きあがってテリーにも好評でしたよ。
パンと同じく、オレンジの皮はおろすのではなく、さっと熱湯に通したものを細かく切った皮を使うので、しっかりオレンジの味を効かせるのがコツです。

I came to love Lemon Ricotta Pancakes while vacationing in Santa Fe, one of our favorite places. If you’re ever there, have breakfast at Harry’s Roadhouse—they have excellent Lemon Ricotta Pancakes! I’ll have to try this recipe, I’ve been trying to recreate them since Harry’s.

I wish I had known about the place in Santa Fe. We were there a few years ago and we didn’t have a lot of luck with food; (We were not able to find even a good Mexican place!) Let me know what you think of this recipe if you try it.
