Vegetable Chili with Grilled Corn – Vegan
One of the things I enjoy the most about being on the 95% plant-based diet is that it makes me stop and rethink about the need of meat in different dishes. For instance, I always thought chili was a meat dish. So when we decided to change our diet, I initially thought I wouldn’t be able to make or eat chili anymore and I was bummed. Then I was like “Wait a minute! Do we really need to have meat in chili?” Our answer was no. So as you can see I’ve made several different versions of vegan chili like this or this and they are all my favorites! This one is an ultimate vegetable lover’s chili. I didn’t use zucchini because Terry is not a big fan but it would be a great addition, too. I asked Terry to grill corn just for this chili (and he grilled them perfectly!!), but it was definitely worth it. The extra step adds a wonderful flavor.

ベジたっぷりチリスープ
いろいろなチリスープ、これまでにもいろいろ作ってますが、コレは、ベジ好きには一押しのチリスープです。
玉ねぎ、にんじん、セロリ、三色のパプリカ、そして、グリルしたコーン入り!
本当はズッキーニも入れたかったんだけれど、残念ながらテリーが苦手だから、断念。
先日友達二家族をうちに呼んでランチをした時に作りましたが、肉なしでもとっても好評でした。
1歳になる男の子まで、親が野菜やら豆やらスプーンですくってあげると、ぱくぱく食べてましたね~。
チリ、ちょっとスパイスがきいてるので、嫌がるかと思いましたが、全然平気そうでした(笑)。
もう夏も終わりだというのに、今年はデッキに置いてあるグリル、一度も使うことなかったのですが、先日このチリスープに入れるだけのために、わざわざ
テリーにトウモロコシをグリルしてもらいました。
ちょっとしたことですが、このグリル風味がいい味を出してくれるんですよね~。
そして、今回は豪勢に(?笑)豆も、ブラックビーンズとキドニービーンズの二種入りで~す。
