savory Super Waffles – vegan

Here is another version of super waffles. We call these Waffles that do not need butter or syrup. The previous one was a perfect grab-and-go breakfast but this one is not only a perfect breakfast but also a perfect lunch on the go. These are packed with fresh sweet corn, scallion, and black sesame seeds. These waffles are slightly sweet, but what you taste is more like “umami”. Soy sauce is optional, but I believe this contributes to creating the umami flavor as well as a pleasant burnt flavor. If you’re planning to eat them with butter and syrup, omit soy sauce.

Savory Super waffles – vegan (makes 6 to 7 individual squares):

1/2 cup all purpose flour
1/2 cup whole wheat flour
1 tablespoon flaxseed meal
3 tablespoon cane sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsweetened apple sauce
1 cup soy milk
1 tablespoon canola oil
2/3 cup chopped scallion
1 cup fresh sweet corn
1/2 cup black sesame seeds
1/4 teaspoon Japanese shichimi or cayenne pepper
2 teaspoons soy sauce – optional

1. Combine all the ingredients.
2. Cook in waffle iron.
