Pineapple Cake with Rum Glaze
I wasn’t planning to make a cake like this last weekend. Saturday was Terry’s birthday. He picked the restaurant and we had a wonderful dinner. We studied their menu at their website in advance and we were so ready to order our food when we got there. Everything was very good, and Terry was looking forward to this dessert that he found at their online menu. Unfortunately our server told us that they don’t serve the particular dessert any longer. Since it was his birthday I wanted to make his birthday dinner complete. So the next day I decided to try making the dessert. This is the cake I created with the help from Terry. I asked him what he pictured from reading the description of the dessert. The cake turned out moist, soft, and tasty. Don’t be afraid to serve with lots of rum glaze and cream (see the photo below).
Pineapple Cake (makes a 9.5 x 5.5 inch cake)
1 cups all-purpose flour
1/2 cup white sugar
1/2 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1.5 eggs
1/4 cup vegetable oil
1/2 can (20 ounce) crushed pineapple with juice
Rum glaze: rum, butter, brown sugar (cook them in a small pot)
1. Mix together flour, salt, sugar, eggs, baking soda, baking powder, and oil. Stir in pineapple with juice. Pour batter into a greased 9.5 x 5.5 inch pan.
2. Bake at 350 degrees F for 50 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let the cake cool.
3. Cut out small pieces with a cookie cutter or simply cut the cake into small squares.
4. Serve with rum glaze, small pineapple pieces, and whipped cream.

土曜日はテリーの誕生日だったのでテリーが見つけたレストランへ夕食へ行きました。
ウエブサイトで、メニューもちゃんと調べてあったので、オーダーもす~いすい。
デザートもしっかり決めていたのに、ウエブサイトのメニューは古かったようで、もうそれは出していません、と言われてしまって、かなりがっくりきてたテリー。
で、オーダーするつもりだったものに近いものを翌日作ってあげました。
何をオーダーしたかったかというと、パイナップルケーキのラム酒グレーズがけなんとか、というもの。
大体どんなイメージをしていたかを聞いて出来上がったのがコチラ。
しっとり柔らかいパイナップル入りケーキに、ラム主風味たっぷりのグレーズをたら~りとかけたら、生クリームを添えて出来上がり。
バースデーボーイにもとっても好評でした~!
