Walnut Miso Muffins – vegan
If miso soup is the only thing that comes to your mind when you hear the word “miso”, miso muffins might sound odd. But miso goes very well with walnuts, and I thought it would be fun to make miso flavored muffins with lots of walnuts. Dark miso combined with cane sugar seems to together create a wonderful caramelized flavor and the crunchy texture on the top. These muffins brown quickly in the oven, so cover them with foil once they get the desirable brown color. Although I thought it was a good idea, I was worried how these would actually turn out. I had my first bite…and I LOVED them! I’ll write the recipe here so that I can make these again.
Walnut Miso Muffins – vegan (makes about 14 muffins):
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
3/4 cup cane sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup walnuts
1/3 cup unsweetened apple sauce
3/4 cup (mixture of 2 and half tablespoons of dark(red) miso, 1 table spoon of cane sugar, and water)
1/4 cup canola oil
Directions:
1. Combine dry ingredients.
2. Stir in walnuts.
3 Combine apple sauce, miso mixture, and oil.
4. Add to dry ingredients all at once.
5. Stir just to moisten.
6. Spoon into muffin cups.
7. Fill 3/4 full.
8. Bake 400F 15-20 mins til lightly browned.

くるみ味噌マフィン(ヴィーガン)
くるみ味噌、というものがあるぐらいだから、くるみと味噌のマフィンがあっても良いではないか、という発想で作ってみました~!
味噌は赤みそを使って。
アイデアには自信があったものの、焼きあがるまではやっぱり不安があったのですが、食べてみたら、コレが美味しい!!
砂糖は、きび砂糖を使ったこともあったのか、味噌ときび砂糖が香ばし~い風味を出してくれます。
そして、まわりがかりっと焼きあがるところも嬉しいサプライズ。
更にこれ、卵も乳製品も入らないヴィーガンなんですよ。
自分的に大ヒットとなりました!
