Pineapple Red Curry
Terry and I recently re-discovered (I said “re”-discovered because I’m 99% sure we had been there before) a great Thai restaurant, Lemon Grass 15 minutes from our house. When Terry suggested ordering pineapple curry at the restaurant, I wasn’t sure because I had never heard of “pineapple” curry before. But Terry said it had great reviews, and I decided to try. It was Thai red curry based curry and was delicious!! The fruity sweet and sour flavors were unexpected but went very well with the spiciness of the curry.
This weekend I decided to try making something similar. My version is a little creamier than theirs, but it turned out pretty well. I’m listing the ingredients I used this time below as a reminder for myself, but I’d like to try different things to improve the recipe. Actually I just visited the restaurant’s website, and I found out that they put basil and tomato in their pineapple curry. So I’ll definitely add these ingredients to mine as well next time for sure!

パイナップルレッドカレー
最近再発見した近くのタイレストランで最近パイナップルカレーなるものに挑戦。
パイナップルカレーなんて今まで見たことがなかったのですが、レビューで人気だったから、とテリーが頼んだもの。
これがと~っても美味しくって二人とも病みつきになってしまいました。
基本はタイ風のレッドカレーなのですが、パイナップルの甘酸っぱい味がいい感じに調和されているのです。
で、この週末、おうちで再現に挑戦。
私バージョンはちょっとココナッツミルクが多かったかな、とは思ったものの、美味しく出来上がりましたよ~。
テリーにも好評でした。
お店で食べたのと同じように、パイナップルの塊、豆腐もちゃんと入れました。
今お店のウエブサイトを見てみたら、どうもトマトやバジルなんかも入っているみたいです。
次回は私もこれを入れてみたりして改良していきたいと思いま~す。
