Coffee Jelly in Almond Milk
The first time my mom made coffee jelly and let me eat it, I remember I was very excited. I felt like I was treated as a grownup. I was not a coffee drinker as a child and I actually didn’t enjoy coffee until I was in my early 30’s. For some reason I liked my mom’s coffee jelly, maybe because it was always served with a lot of whipped cream. I was very tempted but I decided to against whipped cream this time and went with almond milk.

久しぶりにコーヒーゼリーを食べました!
子供のころよく母が作ってくれてたのを覚えてますが、自分で作ったのはたぶん初めてかな?
このほの苦さと甘さが美味しいんですよね~。
ホイップクリームをあわせようと何度も思ったのですが(笑)、今回は大人っぽく(?)アーモンドミルクに入れてみました。
ゼリーを崩していくと、ミルクが少しずつコーヒーミルクに変わっていくんですよ~。

This looks great for a summer morning, did you make it with unflavored gelatin and brewed coffee for the liquid?

Lori,
As I wanted to keep it plant-based food, I used “kanten” which is made from seaweed, instead of gelatin. There is a powder version of (unflavored) kanten and I just added it to brewed (and sweetened) coffee.

Is kanten flavorless like gelatin?

YES,totally flavorless! I used this powder version of kanten. Very easy to use. The texture is quite different from gelatin but I like it.
