Homemade Pasta
This is my second time to make homemade pasta. My first time was several years ago when we got a pasta machine as a wedding gift. It was not a very positive experience. Well, actually it was a disaster! There was something wrong, very wrong, about the dough. The texture was wrong and sticky, and it was so difficult to handle. I had to use so much flour to avoid the dough sticking to the rolling pin and the cutting board. And as a result, the cooked pasta had some unpleasant gummy coating.
A few days ago I was watching TV while working out. They were showing how to make homemade pasta and their scientific explanation for their recipe caught my interest. I found their video online and I exactly followed the directions, including letting the dough rest for exactly 4 hours. The result was amazing!! I couldn’t be happier. I actually enjoyed every single step, from mixing the ingredients to make the dough to rolling it out, to cutting it into thin strips.
The pasta was so good that I wanted to serve it with simple sauce. I cooked garlic in olive oil, put seaweed and capers into the oil, and then added cooked pasta, lemon juice, parsley, salt, and pepper.

今回二度目の挑戦、ホームメードパスタ。
一度めは、もう数年前のこと。。。
結婚祝いにパスタマシーンを頂いたときなので、もう8年ぐらいになりますね。
その時は全然うまく伸ばせなかったり、食感が全然ダメだったり、と、散々な経験をしたものです。
で、それ以来ホームメードパスタのことは忘れていたのですが、数日前にテレビでやっていたのを見て、興味がまた湧いてきました。
テレビの番組をウエブサイトで見つけたので、レシピも作り方もしっかりその通りにやってみましたよ~。
出来上がりは最高!
とっても扱いやすく、生地づくりから伸ばすところから切るまで、すべての段階が本当に楽しくって。
まずは、シンプルにいただきました。
オリーブオイルでにんにくを炒めたら、細かく切った海苔、ケイパーを入れ、茹でたてのパスタを加えたら、レモン果汁、パセリ、塩、こしょうで味付けして出来上がり。

パスタを手作りって、なんだかオシャレですよね☆
彼が最近、ほうとう(きしめん)の作り方を学んだらしく、そのうち、作ってくれるそうです(笑)
ちょうど形が、↑の生パスタと似てて思い出しました。
我が家は、生ほうとうになりそうです(笑)
↓ジャガイモ、バターだけじゃなく、こうして具を乗せると、また美味しそうですね!
やってみます!

Also check out our great homemade pasta recipes in the Betty Crocker Cookbook that you have on page 391q. We tried them both in an extrusion machine and a hand-crank type machine and it works in both. I have more flavors if you want me to send you some, from our Pasta cookbook (such as wild mushroom, spinach, whole wheat, sesame-poppy seed, roasted garlic, lemon and parsley, roasted red bell pepper& spicy pepper homemade pastas).

I just found the page. The recipe is very different from the one I tried; I noticed that Betty Crocker’s uses much less eggs. I’ll definitely try this next time. It’a amazing you can make so many different flavored pastas! I would love a whole wheat pasta recipe. Terry likes whole wheat pasta but I haven’t been able to find whole wheat dry pasta I’m happy with.
