Ginger Cranberry Orange Muffins
I loved these muffins. This is probably the best muffin recipe I’ve ever tried!! I used 1/4 cup applesauce to replace 1 egg in the recipe, and I added about one tablespoon of ground ginger to the batter and sprinkled chopped crystallized ginger on top. But these are the only changes I made to the recipe. Another thing I want to mention about these muffins is that using fresh cranberries was surprisingly wonderful. I always used craisins for baking, and I used fresh cranberries for the first time, only because my mother-in-law bought a bag of fresh cranberries while she was staying with us a little while ago and left it in our fridge. I was skeptical about using them because they tasted so tart and almost inedible when I tried them raw. But once baked in the muffins, the tartness became milder but they kept the freshness and the nice texture. I absolutely loved them.
生姜クランベリーオレンジマフィン
自分で言うのも何なのですが（笑）、これまで食べたマフィンの中で１，２を争うぐらい美味しかったのがこのマフィン！
しかも、これ、卵やバターが入っていません（ヴィーガン）。
レシピはコチラ（英語）を参考にしながらも、少し自分なりにアレンジしたもの。
クランベリー、いつもは、ドライクランベリーを使うのですが、今回初めて生のクランベリーを荒く刻んで入れました。
クランベリー、生のものは、ものすご～く酸っぱくって今考えるだけでも、口がしぼんで！しまうのですが、マフィンに入れて焼いてみると、さっと火が通るせいか、酸っぱさが和らぎ、とっても美味しいです。
たまたま先日うちに滞在していた義母が一袋買ったものの忘れていったクランベリーを悪くならないうちに、と思って使ったものですが、これからは、マフィンなどベーキングものには、ドライなものより生のクランベリーを試してみたいと思いました。
このマフィン、クランベリーのほかには、オレンジ果汁、皮入りで、オレンジ風味も入り、さらに、クリスタライズド・ジンジャーという砂糖漬けのような生姜を小さく刻んだものが上にのってます。
お菓子にはもちろん、朝食にもぴったりで～す。
