Raw Vegan Cheesecake with Raspberry Sauce

Here is a raw dessert I made for the first time! The first raw dessert I had a few weeks ago at a restaurant was cheesecake. I loved it and I couldn’t wait to try making one myself. I used this recipe and followed the instructions exactly. The result was good but not great because I was happy with the overall taste, but the texture of the filling was far from what I had expected. I immediately thought I didn’t soak the cashews the right way because it was my first time to soak nuts like that. But then I started thinking it may have been the pureeing the nut process. I didn’t own a blender (until last night!), so I used my food processor to puree the nuts for the filling. I got my beautiful Vitamix blender yesterday (it was a surprise present from my husband!) and after making unbelievably smooth juice and soup, I’m pretty certain it was the food processor that didn’t puree the nuts smooth enough. Now I have a great blender so I’ll probably try again to make a cheesecake soon!

チーズ無しチーズケーキ、ラズベリーソース添え

先日レストランで食べた植物性・火が通らないチーズケーキがとっても美味しかったので、レシピを探して作ってみました。
クラストの部分は、ナッツ、デーツで出来ていて（もちろん焼きません）、フィリングはこれまた、水に浸して柔らかくしたカシューナッツを主体にした材料をピュレーしたもの。
出来上がりは美味しかったのですが、フィリングの部分はお店のとなんだかちょっと違う感じ。
お店のは本物のクリームチーズのようなスムーズさがあったのに、私のはちょっと違う食感。
最初はナッツの浸しが短かったのかと思ったのですが、どうも、ブレンダーを使わずにフードプロセッサーを使ったせいかな、と。
で、ブレンダーが欲しい、と、ある晩つぶやいていたら、次の日、夫がサプライズで、買っていてくれました～！
このブレンダー、スゴイです。
ジュースとスープを作ってみましたが、スムーズさがベルベットのよう。
リベンジで、チーズケーキもまた作ってみたいな、と。
ちなみにフィリングの色がちょっと濃いのは、濃い色のシロップを使ったため。
次回は薄い色のシロップを使うことも覚えておこうと思います。
