No Meat “Meatballs” with Mushroom Gravy

I hesitate to introduce this post just because of the color of the gravy… It turned purplish gray and it doesn’t look very appetizing, I know. But this tasted too good to not talk about this. So here it is.

A few weeks ago Terry gave me a challenge. He told me he wanted me to make vegan meatballs. I did my best, and to my surprise (lol) they turned out amazing! My no meat meatballs are made of quinoa, onion, garlic, mushrooms, baby portobello mushrooms, walnuts, bread crumbs, ground flax seeds, tomato paste, thyme, parsley, salt, and pepper. I dusted the them with flour right before cooking. I loved their flavors and texture both. For gravy I used dried shiitake mushrooms. Add the mushrooms and soaking water to the cooked garlic and onion, and then puree the whole thing. Then I added a little soy milk and salt and pepper. The consistency of the gravy was perfect, not too thin and not too thick. The reason why the gravy is this color is that I stupidly used red onion without thinking… So if you decide to try making this gravy, DO NOT use red onion but use regular onion.

グレイビー（ソース）の色がなんともすごい色になってしまったので、ブログに出そうか出さないでおこうかかなり迷ったのだけれど、それ以外はものすごく気に入った一品なので、思い切って出すことにしました。

数週間前に、テリーに、“肉が入らないミートボールを作って”、というチャレンジがあって、がんばって作ってみたら、自分でもびっくりするぐらい美味しくできて、テリーにも大好評。

肉なしミートボールは何で出来ているかというと。。。

キノア（ぷちぷちした穀物）、玉ねぎ、マッシュルーム（二種類）、にんにく、くるみ、パン粉、挽いたフラックスシード、トマトペースト、タイム、パセリ、塩、こしょう。

焼く前に、“ミートボール”は小麦粉をまぶしてます。

グレイビー（ソース）は、炒めたたまねぎとにんにくに、戻しておいた椎茸と戻し汁を入れて、が～っとピュレーし、そこに、少し豆乳を加え、塩こしょうで味を調えたもの。

なんでグレイビー（ソース）の色がこんな紫っぽいグレーになってしまったかと言うと、たまたまうちにあった赤玉ねぎを深く考えずに使ってしまったから～！

以前も実は同じような失敗をしたことがあるような。。。

今回はかなり懲りたので、もう同じ失敗はしたくないなあ。。。
