Meat and Potato Stew

“Meat and Potato Stew”, sounds boring? Well, one of the most popular comfort foods in Japan is called “niku-jaga”, which literally means meat and potatoes. Potatoes and thinly sliced meat (usually beef), and some vegetables (such as onion) are cooked in liquid mainly made of soy sauce and sugar. The resulting dish looks rather like a stew. I make the traditional “niku-jaga”, too, but this time I decided to jazz it up a little and made it a kind of Italian style, using tomato and white wine instead of soy sauce. Grated lemon, and chopped parsley and rosemary were added on top before serving. You don’t really need this, but the lemon and herb mixture gives a nice additional colors and flavors. Terry and I really liked the Rosemary flavor for this stew.

コチラで美味しそうな肉じゃがのアレンジを発見。
ありそうでないよなあ、というユニークな発想に刺激を受けて、私も、と。
肉じゃがイタリア~ン。
私のは、トマトで煮込むからイタリアン、っていう発想。。。ものすごくありがち、よね(笑)。。。
こういう料理は他の名前でもありそうで、このネーミングはちょ~っときついかも(笑)?
それでも一応、“肉じゃが”に忠実に、牛肉も自分で薄切りにした頑張りを買ってもらえれば(笑)。
(アメリカでは日本のような薄切り肉はなかなかスーパーで見つからないのだ。私は今回半解凍したステーキ用牛肉を自分でナイフで薄切り。)
そのまま食べても美味しかったんだけれど、彩りとフレーバーを追加するため、レモンとパセリとローズマリーのみじん切りを最後にぱらっと。
特にローズマリーがあうね、と夫と意見が一致。
日本では、肉じゃがはおふくろの味、アメリカでも、“Meat and Potato(ミート・アンド・ポテト)”というと、いわゆる気取らない家庭料理(ステーキとマッシュポテトとかね)を全般に意味することもあったりして。
ジャガイモと肉の組み合わせ、ほっとする家庭の味を作りだす、っていうのは、どこでも同じなのね。
夫はごろごろとした塊肉じゃなくて、この薄~くスライスされた牛肉が気にいったようでありました。
肉じゃがイタリア~ン: サラダ油、玉ねぎ、ジャガイモ、牛肉薄切り、白ワイン、トマト缶詰(ブレンダーでどろっとさせたもの)、ビーフブイヨン、ローリエ、ドライオレガノ、ドライタイム、醤油、ブラウンシュガー、塩、こしょう、レモン、パセリ、ローズマリー

これも「うんうん!」と頷きながら拝見しましたぁ~
肉ジャガって確かに色々とアレンジできそうですよね。
トマト風味までは思い付いても、最後にレモン、パセリ、
ローズマリーとはさすがにreikoさん☆
私も時々キムチを使って肉ジャガ作ります。

『イタリアン(?)の味付けにお醤油』というのは
日本人ならではですね~☆
洋食を作るときにお醤油を入れることはありますが
トマトが入っていると勇気が萎えて^^;

そうなんですよ!アメリカって美味しいリコッタと薄切り肉がないですよね(笑)。
私はチャイナタウンに行ったときに薄切り肉を買うくらい、自分でスライスしようとは思いませんでした。。

肉の薄切り、半解凍だったので、比較的切り易かったのですが、それでもお店で売ってれば楽なのに~、と思ってしまいました(笑)。

薄切り肉、見つけるの難しいですよね。
半解凍にしておくと比較的薄くスライスしやすいですよ。
スライス、っていうか細切れ状態になったりもしますが(笑)。
昔より若く見えます~?やっぱり短い髪の毛のせいかな?

I really want to try this sometime. I’ve read and seen about 肉じゃが before and it sounds like I would really enjoy it. I would want to try the traditional version for sure. Maybe you can coach me on what to get and how to make it sometime. 😉
I have also had a really hard time finding thinly sliced beef for asian dishes. I like to make my attempt at 牛丼 every so often, and also Mongolian Beef, and especially for beef bowls you need really thin sliced beef. I used to be able to get some frozen blocks of thin sliced beef at Costco, but they stopped carrying it a few years ago. Maybe I’ll find it again sometime.

I found this 肉じゃがrecipe in English (http://japanesefood.about.com/od/potato/r/nikujaga.htm), and it looks pretty good.
For thinly sliced beef, I freeze a block of meat for a few hours, take it out for a little while, and then slice it with a knife when the meat is half frozen (hard inside, but a little softer outside). I sliced the meat this way to make this dish, and it worked out pretty well.

Reiko: すごい! ありがとうござ生ます – for the recipe…I actually have learned quite a bit of 日本語 from the japanese.about.com site, so I don’t know why I never though of looking for recipes there.
I’m pretty sure I can make that…just have to get some daishi, mirin, and shiratake noodles next time I’m at the asian store. I’m not sure what a “drop lid” is either, but I figure if I cover the pot that should do the trick.
I’ll let you know how it turns out once I get a chance to try making it. I’ll also try your meat cutting trick too…I have some pretty sharp knives that should help.
