Ginger Strawberry Lemonade
Winter in Minnesota is long and harsh.
It goes from November to March, and it does feel like the half of the year is winter.
It is the beginning of March, and you may think I’m in a dark place, but actually, I don’t dislike this time of the year.
It’s certainly still cold, but knowing that it is the last stretch gives me optimism and brings me a smile even on a freezing day.
Just like the Strawberry Cashew Cream Sandwich I recently made, this refreshing ginger strawberry lemonade was a perfect drink to let me dream about the upcoming beautiful Minnesota spring.
I can’t say this loud or often enough, but I AM READY FOR SPRING.
I found this beautiful glass jug at this store that newly opened in the suburb of the Twin Cities. They have many other fun stuff for the kitchen. Some of their shelves were still empty, and I can’t wait to check back again in a few months.
2 cups water
2/3 cup sugar
1/3 cup ginger, chopped
1 cup fresh lemon juice
1 cup strawberries, pureed
1.5 cup sparkling water
ice cubes
fresh mint
1. Combine water, sugar, and ginger in a pot. Boil the water. Stir and make sure the sugar dissolves. Remove from heat. Let it cool for about an hour.
2. Remove ginger from the syrup. Add lemon juice, pureed strawberry, and sparkling water.
3. Serve with ice cubes and fresh mint.
