Mango Herb Soba Salad with Sweet Chili Dressing
I’m a big noodle fan.
Noodle has always been my choice of carbs: 1 noodle, 2 rice, 3 bread.
I like any types of noodle, but soba is probably one of my favorites.
This soba salad is packed with big flavors.
The ground meat type of Just Like Meat is cooked and flavored with teriyaki sauce and then the whole salad is served with sweet chili dressing and lots of fresh herbs.
Super fresh!
It’s one of those dishes that make me feel good during AND after I eat.
These beautiful yellow and white flowers brighten up my kitchen.
Mango Herb Soba Salad with Sweet Chili Dressing
canola oi
1 cup of ground meat type of Just Like Meat, cooked according to the instructions on the package
salt and pepper
1 tablespoon sugar
1 tablespoon soy sauce
1 cup cooked soba noodle
1/2 cup mango, chopped
1/2 cup spinach
radish slices
cucumber slices
sweet chili dressing
– 1 tablespoon soy sauce
– 1 tablespoon maple syrup
– 1 tablespoon canola oil
– 1/4 teaspoon chili garlic paste
– salt and pepper
fresh mint, cilantro, and scallion, chopped
lime
1. Cook Just Like Meat in oil. Salt and pepper. Add sugar and soy sauce. Continue to cook for a few minutes.
2. Place soba noodle, Just Like Meat, mango, and vegetables in a bowl.
3. Make dressing. Combine all the ingredients and mix well.
4. Serve salad with the dressing and fresh herbs. Splash lime juice.
