Banana Date Waffles
I should have said Banana Date Waffles SERVED WITH BOURBON MAPLE SYRUP.Because I made these waffles mainly to try this syrup we got at the farmer’s market.
The banana and the dates were a great match for this syrup!!
I try to minimize sugar for my breakfast. There is no added sugar in the waffle batter, and the caramelized natural sweetness from the banana and the dates was just perfect!I took some for a to-go breakfast this week. They tasted great without butter or syrup, too.
Dates are one of the things underused in my opinion. I even forget about its existence myself sometimes, even though I always keep them in my pantry. They are actually great to keep around. I eat them late at night when I have craving for something sweet.
The base waffle recipe is my sister-in-laws. These waffles are light and tasty. Thank you, Patty!!
1.5 cup all purpose flour
3 teaspoons baking powder
3/4 teaspoon salt
3 eggs separated
1.5 cup milk
6 tablespoons canola oil
2 bananas sliced
about 10 dates cut into small pieces
1. Separate eggs. Beat whites until stiff.
2. Mix all ingredients except for bananas and dates together.
3. Fold egg white gently into the batter.
4. Pour the batter on a waffle maker. Sprinkle bananas and dates. Cook until golden brown.
