Spinach Cream Cheese Pound Cake
I just found out St. Patrick’s day is around the corner! I usually don’t do much for this holiday, but I wanted to post something green to recognize it. Here is a cream cheese pound cake I made a few months ago and forgot to post. The beautiful green color comes truly only from fresh spinach. This recipe (in Japanese) was used as a base.
Spinach Cream Cheese Pound Cake
100g cream cheese (room temperature)
100g butter (room temperature)
4 (or 200g) eggs (room temperature)
1~2 cups spinach leaves
200g sugar
190g all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup walnuts
1. Preheat the oven at 325F.
2. Combine cream cheese and butter and mix well.
3. Puree spinach in eggs. Slowly add to the cheese/butter mixture,
4. Add sugar and mix well.
5. Add flour, baking powder, and salt, and mix.
6. Mix in walnuts.
7. Pour into a buttered 9×5 inch pan.
8. Bake for about 1 hour or until a toothpick inserted in the middle of the cake comes out clean.

アイルランドの祝日ですが、アメリカでもかなり人気。
緑のものでお祝いをします。
セントパトリックデー、月曜日にやってくる、というのに気づいて、古い写真の中から、緑なものを探しました（笑）。
コレ、アップしようしようと思っていて、ついつい後回しになっていたもの。
この鮮やかな緑色、ほうれん草の自然な色だけなんですよ。
月曜日は、うちの近くにセントパトリックのパレードが通るようなのですが、１２時に始まるって。。。
仕事で見に行けな～い！
