Here is another vegan muffin I created. Muffins are so easy to take to work for breakfast and a snack, so I like to make enough for a week. You can use up a whole can of tomato paste for making these 12 muffins. The orange color is pretty and very appetizing, too.
Tomato Muffins – vegan (Makes 12 muffins)
3 tablespoons flaxseed (ground)
8 tablespoons plus 1/4 cup water
3/4 cup canola oil
1 can (6oz) tomato paste
2/3 cup sugar
1 and 1/2 cup all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
salt and pepper
1/2 cup corn
1/2 cup black olives (cut into quarters)
1/3 cup green onion (chopped)
1. Preheat oven to 350F. Line muffin pan with paper liners.
2. Combine flaxseed, water, oil, tomato paste, and sugar. Mix well.
3. Add flour, baking powder, baking soda, salt, and pepper. Stir until just combined.
4. Mix in corn, olives, and green onion.
5. Bake for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
トマトマフィン(ヴィーガン)
またまたマフィン作りました。
仕事に持っていく朝ごはんやスナックにぴったりなので、ついつい週末に作りたくなります。
今回も乳製品が入らないヴィーガンですよ~。
砂糖は入るので少し甘いのですが、どっちかというとお惣菜風。
具も、コーン、黒オリーブ、小ねぎです。
こちらで売っている普通サイズのトマトペースト1缶丸ごと使いました。
きれいな色に出来上がったのも嬉し~い♪
