Cod Risotto
It’s hard to find fresh fish here in MN. The fish section in the grocery store is so tiny (especially compared to the meat section next to it). The size really shocked me the first time I saw it because I was so used to a much larger selection of fresh fish in Japan. But since I’ve been here for almost 15 years, I’ve got used to it. I have even found a few favorite fish here, and cod is one of them. Last weekend I saw this beautiful cod at the store and I decided to make Japanese style risotto with it. The soup was made with Japanese fish soup base and ginger. It was served with lemon soy oil.
Cid Risotto: rice, water, dashi no moto (Japanese fish soup base), ginger, salt, cod, napa cabbage, green onion, carrots, lemon soy oil (lemon juice, soy sauce, canola oil, sugar, vinegar)
たら雑炊
Cod(コッド)という魚がこちらでは時々スーパーで見かけるのですが、コレがなかなかお気に入りなのです。
白身魚で、調理すると、ほろほろっと大きな身が崩れます。
たまたま白菜もうちにあったので、和な感じに、雑炊を作ってみました。
生姜を利かせた出汁でごはんを煮たら、食べる直前にレモン醤油オイルをかけていただきま~す。
