Asparagus Quiche with Scallion Sauce
I like asparagus but I always hesitate a little bit before I actually put it in my shopping cart. You just never know how good (or not so good) it may taste. This time I was lucky and this asparagus was sweet and very tasty. I wanted to put as much asparagus as I could in this quiche. It’s often hard to get vegetables in breakfast but I was very happy with this quiche especially when served with the beautiful green scallion sauce.

アスパラガスキッシュ、小ねぎ添え
アスパラガスをたっぷり入れたキッシュです。
アスパラガスって当たり外れがあって、実は買うときちょっと躊躇するのですが、美味しいものは美味しいんですよね～（って当たり前ですが）。
見た目で判断できるといいのですが。。。どなたか美味しいアスパラガスの見分け方をご存じな方、教えてくださ～い。
今回はラッキーでこのアスパラガスはあたり！
甘くって美味しかったです。
さっとソテーしてからパイ、卵タネに入れて、オーブンで焼き上げました。
そのままでも美味しいのですが、ソース好きな私とテリーなんで、今回もソースを添えました。
簡単に出来ちゃう小ねぎソース。
材料は、小ネギ、カノーラオイル、酢、砂糖、塩、こしょう、お湯だけ （確か。。。作ったのは1か月前ぐらいなんですよね、コレ。。。）。
バーミックスでがーっと軽くとろみが出るまで混ぜます。
