Baked Sweet Potato with Lime Cilantro vinaigrette
When I have potato choices at restaurants, baked potato is usually not my first choice. I tend to go for mashed or au gratin. But when I saw one of facebook friend’s vegan baked potatoes with roasted corn and guacamole on top, I wanted to make baked potatoes myself. I chose sweet potatoes as I like its subtle sweetness and I thought it would go well with sweet and tangy cilantro sauce. Sweet potatoes were baked for 50 minutes in the oven at 425F. Then they were loaded with Greek yogurt, sliced peppers, roasted corn, green onion, and lime cilantro vinaigrette (cilantro, lime juice, white vinegar, canola oil, sugar, cumin, salt, pepper). This was very satisfying and can be a great vegetarian meal when served with salad or soup.

ベイクドスイートポテト
ベイクドポテトはアメリカではとっても人気。
レストランでもステーキなんかを頼むと、ポテトのチョイスとして、ベイクドポテトが選べます。
私は、ベイクドポテトって、焼いたポテト、ってことなんで、なんか面白味がない、と思ってしまいついつい、マッシュポテトやらグラタンやらを選んでしまいます。
そして、家でも自分で作ったことってたぶんなかったような。。。
ところが先日、フェースブックで友達が、コーンやらアボカドなんかをのせてベジタリアンなベイクドポテトの写真をアップしているのを見て、私も作りたくなってしまいました。
彼女のはふつうのじゃがいもでしたが、私はスイートポテトを使ってみました。
私バージョンは、オーブンで中が柔らかくなるまで焼いたら、ギリシャヨーグルト、焼いたコーン、パプリカ、小ねぎ、そして、ライム香菜ソースをかけて出来上がり～。
甘くって酸味が効いたライム香菜ソース、爽やかなヨーグルト、そして、ほんのり甘いスイートポテトの組み合わせがおいしい！
ヨーグルト入りなので、ヴィーガンではないけれど、ベジタリアンですね～。
