Veggie Temari Sushi Balls
There are many different types of sushi, but these small balls with decorative toppings are called “Temari” sushi.
Temari means traditional Japanese balls.
They are hand-made, and I don’t know if I have patience to make the complicated pattern with threads, but I do enjoy making “temari” balls with food!
This time I made four different kinds: cucumber, radish, beet, and olives.
It was fun to make these. Who said you can’t play with food!
Veggie Temari Sushi Balls
2 cups cooked sushi
1~2 tablespoons white vinegar
1~2 tablespoons sugar
salt
-cucumber slices, nori (seaweed) paste, umeboshi (Japanese salted plum)
-salted sliced radishes, basil leaves, olives cut into small pieces
-sliced pickled beet, radish, pomegranate
-muffuletta olive salad, roasted seaweed sheet
1. Make sushi rice. Combine vinegar, sugar, and salt. Pour it over cooked rice. Mix well. Let it cool.
2. Make 16 small balls. Place the toppings on the rice balls.

どんなお寿司もですが、手毬寿司は特に日本料理の美しさを感じさせますよね。
手に入る魚で作ろうと最初は思っていたのですが、急に思い立ったこともあって、うちにあった野菜だけで作ってみました。
4種類。
きゅうり、海苔、梅干し。
ラディッシュとバジル、オリーブ。
ビーツ、ラディッシュ、ざくろ。
オリーブごはん、海苔。
こういうちまちました作業、結構好きだったりします。
また近いうちに手毬寿司作ってみたいです。
たまたまこの日テリーが会う予定だった人に、一つずつ4つをスナックとして持っていってあげたのですが、喜ばれたようです。
4つ小さな箱に入れたら、なんだかカップケーキみたいな雰囲気でしたもんね。
