Yuzu Spiced Kabocha Pumpkin
I’ve been to this local Asian grocery store for many years, but I still find something new.
Last time I was there it was one of those days and I was able to find several new things, and it’s always exciting when that happens.
This spicy yuzu paste (Yuzu “kosho” in Japanese) is one of them and I was excited to finally use this for this dish.
This citrus flavor packed paste gives a refreshing yet wonderful kick to the dish and I absolutely loved it.
Can’t wait to come up with another recipe to enjoy this paste!
2 tablespoons sugar
1 tablespoon water
1~2 tablespoons sake
1 tablespoon soy sauce
1/2 teaspoon yuzu spicy paste
salt
1. Place Kabocha pieces in a single layer in a pot.
2. Sprinkle sugar over Kabocha. Wait for a half hour to one hour until Kabocha gives out water (or sweats).
3. Add water and sake. Boil and then turn down to low heat. Add soy sauce and yuzu paste and continue to cook covered over low heat for 10 to 15 minutes or so until Kabocha is cooked through. Salt. Check occasionally to prevent the Kabocha from burning as it’s cooked with a small amount of liquid.
柚子胡椒風味かぼちゃの煮付け
いつも行っているアジア食料品店なのですが、
先回はいつもは見かけないようなものをいくつか見つけてわくわく。
新しく納品されたのか、それとも私がこれまで見落としていたのか???
昨日報告したように、甜麺醤と山椒を見つけたのもうれしかったのに、何と柚子胡椒まで発見!
で、これも使いたくってうずうずしていたのですが、週末にかぼちゃの煮付けに使ってみました。
ぴりっと爽やかな辛さがいい感じ。
先日鍋をやった時にも、ポン酢に少し入れたらこれまた美味しかったですね~。
先週末はある理由でずっとおうちで過ごしていた反動か、今週末はどうしてもショッピングに出かけたくって、土曜日の朝、好きなお店をはしごしました。
主に、キッチンものと雑貨がお目当てのショッピング。
いくつか素敵なものを見つけてなかなか満足。

もともとは手触りのいいリネン生地に赤いスティッチが気に入ったのですが、ちいさなポケットにもやられた、という感じ(笑)。
早速今朝朝食に使ってみました。
