Koya Tofu Fried “Chicken”

When I lived in Japan, I never really paid attention to many Japanese traditional food.

You know, we tend to take things for granted until you lose them.

Koya tofu was one of those foods.

Koya tofu is basically freeze dried tofu, and once you soak it in hot water or soup for a few minutes, it’s ready to eat.

I like it because this is packed with protein from soy beans, but another unique thing about it is its texture.

It has a much more substantial texture compared to regular tofu and you can use it for dishes that regular tofu doesn’t work well for.

This fried “chicken” was made with koya tofu. There is no meat.

The texture is quite similar to chicken breast.

But the most important thing to me is that it tastes good. I actually prefer the taste of this to real chicken fried chicken!

これまた昨年日本に帰国した時に買ってきた高野豆腐。

ずっと存在を忘れてました（苦笑）。

何を作ろうか迷った末、作ろうと決めたのは、

実は、コレじゃなかったのです（苦笑）。

コレは、本当に作りたかったものを作ってる途中。

揚げたてを味見したらあまりに美味しかったもので、急きょフライドチキン（風）として写真を撮りました。

先日紹介した野菜出汁とにんにくで下味をつけた高野豆腐に、コーンスターチをまぶして揚げ、揚げ立てに塩。

すっごく美味～い。

食感も鶏の胸肉みたいな感じかな？というより、個人的には鶏肉より好きな食感・味だったりします。

それにしても、こういう昔からある日本の食材ってスゴイものが沢山ありますよね。

もっとしっかり見直してどんどん使っていきたいなあ（と、海外にいるから余計そう思うのかな？）。

高野豆腐、今度はカツにしてもおいしそうかも、と密かに（？）目論見中。
