Birch Dressing
I talked about the maple syrup made by Terry’s cousin, Brandon.
When we went to pick up the maple syrup, Brandon told us about other types of syrup he makes.
Birch syrup was one of them.
I had no idea you can make syrup from birch trees!!
He does not make a lot of it, but he sent us home with some he had made a few years ago.
It’s hard to describe the flavor, but I would say it’s a bit sharper than maple syrup.
The first idea that came to me was using this to make dressing.
Well, this was one of the most unique and tasty salad dressings I’ve ever made!
We enjoyed it on salad for lunch last weekend.
I think it’s so cool to get to enjoy “birch” dressing made with birch syrup locally handmade by a family member!
Birch Dressing
1/2 cup birch syrup
1/3~1/2 cup white vinegar
1/4 cup canola oil
1~2 tablespoons sugar
1~2 teaspoon whole grain Dijon mustard
salt and pepper
1. Combine all the ingredients using a hand blender until it becomes thick.
白樺ドレッシング
白樺の木からとれたシロップを使ったドレッシングなので、白樺ドレッシング。
テリーのいとこ、ブランドン、先日は彼の作ったメープルシロップを紹介しましたが、彼、別の木からもシロップ作ってるんですよ。
メープルシロップに比べると作る量はずっと少ないようですが、この白樺シロップ、数年前に作ったものを分けてもらいました。
何とも説明し難いのですが、メープルシロップがまろやか、というなら、これはもうちょっとシャープな味、何ともユニークな味がします。
早速このシロップを使って、ドレッシングを作ってみました。
ランチのサラダにかけてみましたが、これ、すっごく美味しい!
これまで作ったドレッシングの中でもかなり気に入った味です。
いやいや、白樺からシロップがとれるなんて、今回初めて知りました。
