Chunky Black Bean Soup
I talked a bit about my renewed commitment to our 95% plant based diet.
Going to Japan was a good opportunity for me to re-think of my diet.
It gave me enough time to really think about what I want to put in my body.
Staying on the mostly plant based diet is very important for me, but in addition to sticking with the 95% plant based diet, I also decided to minimize processed food to avoid unnecessary chemicals.
So, this time I wanted to make soup without using store-bought soup stock or soup base.
And surprisingly it turned out great!
I did make an effort to create strong enough flavors, such as adding extra garlic and using different spices/herbs, but it was kind of fun and I actually enjoyed the challenge!
canola oil
2 garlic cloves, chopped
1 onion, chopped
1 celery stalk, chopped
1 carrot, chopped
1/3 ~ 2/3 can of tomato, pureed
1 can black beans
1/2 tablespoon cane sugar
2 bay leaves
cumin
dried oregano
hot sauce
1 tablespoon jalapenos from jar, chopped
cilantro, chopped
1. Cook garlic, onion, celery, and carrot in oil for a about 5 minutes until they are tender.
2. Add pureed tomatoes, black beans, sugar, bay leaves, cumin, dried oregano, and hot sauce. Cook for a few minutes.
3. Serve with jalapenos and cilantro.
野菜ころころブラックビーンスープ
先日のサラダの写真に写っていたのが、コレ。
ヴィーガンランチにしたかったので、こんなスープを作ってみました。
サラダの野菜は人参だけだったので、スープにも野菜をたっぷり投入。
いつもはがーっとハンドブレンダーで滑らかにしてしまいがちな豆スープですが、今回は、ころころと野菜と豆を残して、その食感を楽しみました。
いわゆる食べるスープですね~。
瓶入りのハラペーニョ(辛いだけじゃなくってちょっとある酸っぱみが良いのです)が入って、むむっ!と言わせます(笑)。
今回日本から帰国して、改めてどんなものを自分は食べていきたいのか、と考える良い機会となりました。
95%植物性食生活をしっかり続けていきたい、と思うのと同時に、Whole Foods を目指し、添加物の入った市販製品をできるだけ使わないようにしたい、というのが新たな目標です。
ということで、このスープも、市販のスープ・コンソメキューブを使いませんでした。
そういうものを使わない、ということは、他のもので味をぼやけないようにしないといけないので、脇役をしっかり固めることは大切です。
にんにくや生姜などの薬味系野菜、スパイス、ハーブはそういう時にやっぱりいい働きをしてくれますね~。
