Green Gazpacho
I knew summer was slowly going away.
But it kind of shocked me when I realized that September is already here!
I had these beautiful gazpacho pictures, and I almost panicked thinking I might be too late to post this recipe.
Well, summer is definitely going away, but I’m guessing (hoping) there will be still some more warm days.
Gazpacho is a refreshing cold soup, but this beautiful green color of this green gazpacho makes this soup even more appetizing on a warm day!
1/4 cup white vinegar
1 tablespoon fresh lime juice
1 cup plain Greek yogurt plus more for serving
1/4 cup olive oil, plus more for drizzling
1 oz. a day old baguette, torn into 1” pieces
1 cucumber, halved lengthwise, seeds removed, cut into large pieces
1/2 ~ 1 green bell pepper, coarsely chopped
1/2 jalapeno pepper, chopped
4 tomatillos, husked, quartered
4 scallions, cut into 1” pieces
1~2 garlic cloves, cooked in boiled water for a few minutes
1~1.5 tablespoons sugar
salt
Hungarian paprika (for serving)
1. Combine all the ingredients in a bowl.
2. Cover and chill for a few hours.
3. Puree with hand blender.
4. Serve with yogurt, olive oil, and paprika.

ちょっと油断をしていたら、9月に突入したことに気づいて、ちょっとショック。。。
いやね、秋は嫌いじゃないのですが、夏が去っていくのが何とも名残惜しいのです。
で、気づいたら、こんなものを作っていて、これは、秋にはアップできない!、ということで、
あわててアップです。
グリーンガスパチョ。
赤いトマトの代わりに、緑色のトマトみたいなトマティーヨという酸味のある野菜を使う冷たいスープ。
爽やかでさっぱり美味しかったで~す。
