Ground Cherry Galette
If you’ve been following my blog, you probably guessed.
Yes, I had some ground cherries and pastry dough left from making this pie.
Since last time I used the cherries fresh, I decided to bake them this time.
The ground cherries are very sweet fresh, but once it’s cooked it becomes even sweeter!
To balance out the sweetness, I served this galette with sour cream, and it’s delicious!!
But of course, you can serve with whipped cream too (whipped cream makes everything taste good, right?).
Ground Cherry Galette
pie crust (makes about 2 galette) adapted from this recipe
– 1 1/4 cups all-purpose flour
– 1/4 teaspoon salt
– 1/2 cup butter, chilled and diced
– about 2 tablespoons ice water
filling
– about 2/3 cups ground cherries, cut in half
– 2 teaspoons corn starch
– 1 tablespoon sugar plus 1/2 tablespoon sugar
– 1/2 tablespoon butter cut into small pieces
sour cream (for serving)
1. Preheat the oven to 400F. Roll out the pie dough.
2. Make filling. Combine ground cherries, corn starch, and sugar.
3. Place the cherries on the dough. Fold the pastry edge up and over the cherries.
4. Bake until the crust is golden brown for about 45 minutes. Serve with sour cream or whipped cream.
ゴールデンベリーガレット
ファーマーズマーケットで見つけた、ゴールデンベリーなる果物。
まずは、こんなパイを作ったのですが、
まだちょっと残っていたので、
今回はガレット。
半分に切ったゴールデンベリーをばさばさっとのせて、焼きました。
もともと甘いベリーなのですが、
火を通すとさらに甘さが増します。
生クリームではなくって、甘さのバランスをとるためにも、サワークリームを添えました。
ガレット生地、前回のパイ生地と同じもの(残ったものを冷凍しておいたもの)を使いましたが、
やっぱりおうちで作る生地は美味しい。
ガレットは、きれいに型に入れたりする必要もないので簡単にできるところも嬉しい。
見た目も、この素朴なところが私は好みだったりします。
