Cold Noodle with Egg and Veggies
A.K.A. “HIYASHI-CHUKA”.
This is a popular summer noodle dish in Japan.
Around this time of the year you start seeing signs at noodle shops saying “We’ve started serving “hiyashi-chuka”.
We kind of associate this sign with the beginning of summer in Japan.
Kids will be out of school in a few days, too.
Since I can’t find this sign in Minnesota, but I’ve been so in the mood for hiyashi-chuka the last few days, I decided to make it myself for lunch today.
Yep, you learn to make things when you live abroad!
Hiyashi-chuka is basically cold noodle (Chinese noodle or ramen noodle) served usually with eggs, vegetables, and soy-based dressing.
Yuuuum! This was Sooooo good!!
Cold Noodle with Egg and Veggies (1 serving)
1 cooked ramen noodle
cooked egg
– 1 egg
– 1/4 teaspoon sugar
– salt
– canola oil (for cooking)
veggies, julienned (recommended veggies: cucumber, tomatoes, radishes, zucchini)
green onion, chopped
ginger from jar
dressing
– 1 tablespoon soy sauce
– 1 tablespoon white vinegar
– 1/2 tablespoon sugar
– 1/2 tablespoon tahini
– sesame oil
sesame seeds (optional)
1. Run cold water through cooked ramen noodle. Drain well.
2. Cook egg. Combine all the ingredients except for oil. cook egg in a nonstick pan (it looks like a crepe) on low heat covered for a few minutes until cooked through. Slice thinly.
3. Make dressing. Combine all the ingredients.
3. Serve noodle with egg, vegetables, green onion, ginger, and dressing. Sprinkle sesame seeds if you prefer.
冷やし中華
ここ数日冷やし中華が食べたくってしょうがありませんでした。
テリーにも、今日のディナー何にする?
と聞かれるたびに、“冷やし中華~!”、と
日本語で答えてました(笑)。
テリー、優しいんですよ、
それ、出すところあるんだったらそこに連れてってあげる、と言ってくれるのですが、
冷やし中華を出すレストラン、あるんでしょうかねえ~、ミネソタに。。。
日本食レストラン、お店によっては夏だけ出すところあるかもしれませんが、
探すのも面倒なので、
今日自分で作ってしまいました~!
たまたま冷蔵庫にきゅうりがなかったので、ズッキーニで代用。
麺も、袋さっぽろ味噌ラーメンの麺で作ったり。
ははっ、なんとかアメリカのおうちでもできるものですね。
すっごく美味しくって大大満足でした。
たれは、ちょっぴりタヒニ(ごまペースト)入り。
少し入るとコクがでますね。
