Soba with Cabbage and Sprouts Salad
I found these beautiful daikon radish sprouts at the local grocery store, Cub Foods.
These looked very different from the daikon radish sprouts, or “kaiware-daikon”, I grew up with in Japan.
These are thicker, curlier, and they have a pretty light pink color here and there.
I wasn’t expecting this, but this was grown locally, in Buffalo, Minnesota, and I decided to give it a try (I love to support local farmers!)
I absolutely loved these sprouts!
They have a quite strong radish taste, but it’s very refreshing.
The pink color is also so pretty when mixed with cabbage.
I hope these sprouts will be available for a while. This will be my new favorite salad ingredient this spring and summer.
salad
– 1 cup cabbage, thinly sliced
– 1 cup daikon radish sprouts
– 1/2 avocado, cut into small pieces
– 1/3 grapefruit, cut into small pieces
wasabi dressing
– 1 tablespoon soy sauce
– 1 tablespoon white vinegar
– 1 tablespoon canola oil
– 1/2 tablespoon sugar
– 1/4 teaspoon wasabi paste
80~100g soba noodle, cooked
1. Make salad. Combine all the ingredients.
2. Make dressing. Combine all the ingredients.
3. Place salad on cooked soba. Serve with dressing.
しゃきしゃき蕎麦サラダ
先日貝割れ大根らしきものをスーパーのサラダバーで見つけて、ちょっとわくわくした私。
週末にわざわざ買いに行ったら(別のスーパー)、Daikon Radish Sprouts(大根スプラウツ)として売っていたのは、コレ。
なんか貝割れと見た目が違~う。
もっとちりちりとしていて、茎がしっかりしていて、味も濃い感じ。
しっかりパッケージを見てみたら、ここ、地元ミネソタ州で作られたものらしい。
こういう地元産の野菜ってやっぱり嬉しい。
思っていたのとは違っていたのですが、とりあえず購入。
ちょっとピンクがかった色も春らしくってなかなか良いわ~。
これをキャベツとあわせて、しゃきしゃき感をしっかり味わう蕎麦サラダを作ってみました。
脇役は、アボカドにグレープフルーツ。
わさびドレッシングをかけて、いただきました。

Simple, fresh ingredients with minimal prep work – what can be better than that?! I love, love, love soba – so I’m always looking for new ways to make it! This sounds amazing!

Thank you, Ms. Morimoto! I love soba, too. I usually like it in soup, but in the spring and summer time, I enjoy it as salad as well.
