Shortbread Cookies with Lemon Curd and Raspberry Jam
Okay. I was not intending to make these. I was originally planning lemon bars. I actually made them, but they turned out to be a disaster! The top lemon filling had a horrible rubbery texture, but I just couldn’t throw away the whole thing because the bottom part was so good. So I saved the crust. These cookies were so perfect and tasted great with raspberry jam and my homemade lemon curd.

本当はレモンバーを焼いたのですが、上のレモンフィリングの部分が悲惨な出来になったので、
下のクッキー部分を救助したもの。
そして、あらためて、レモンカードを自分で作って、それをのせて、クッキーのようにいただきました。
レモンカードと一緒に、市販のラズベリージャムとミントの葉っぱをのせると、これが最高!
終わり良ければすべて良し?!

Hi, Reiko, what source recipe did you use for the lemon bars? I’m curious about that. I’ve made them since high school and love them and have a great recipe—-basically the one in the Betty Crocker Cookbook I gave you. If you like lemon, use the lemon peel listed as an if desired ingredient in the filling. The crust is very tender.

I used Ina Garten’s recipe on foodnetwork site, but I made some changes to the filling recipe, so I know it was my fault. I should definitely try the Betty Crocker recipe!! Terry and I both love lemon bars!!
