Deep Dish Curry Pizza with Broccoli and Eggs
It started more like this… Since we were preparing to put our house on the market, I didn’t want to mess up our kitchen. I started avoiding using the stove top so that I wouldn’t splash oil. And then we started slowly moving into our new house. Since our new kitchen is new and so pretty(!), I still hesitate to use it. The stove top is black. It’s pretty but it shows everything, even a little water mark! So I continue to use the oven more than the stove top to cook. Thus, more pizza nights for us.
This is our lunch today. The idea came from the leftover curry I had in the fridge. This Japanese style curry is rather thick compared to the typical Thai or Indian curry, so it was perfect for filling the deep pizza crust.
Deep Dish Curry Pizza with Broccoli and Eggs: pizza crust (all purpose flour, whole wheat flour, salt, yeast, water: I used the Boule recipe in “Artisan Bread in Five Minutes a Day” as a base), Japanese curry (canola oil, vegetables( including onions, mushrooms, kale, peppers), water, Japanese curry cubes), cooked broccoli, hard-boiled eggs (roughly chopped), Italian Style shredded cheese (mixture of Mozzarella, Romano, Asiago, etc.)
