Orange Ricotta Rolls
Terry and I had a chance to visit Cafe Latte in St. Paul for late dinner last week. We had salad and soup and they were both great, but the thing I really liked was the rolls that came with our soup. Well, they weren’t handed to us, but they had 5 or 6 different flavors and we got to choose the ones we liked. Interestingly Terry and I both picked the orange ricotta one, and they were fantastic! I loved this flavor combination so much that next day I was at a grocery store picking up ricotta cheese and a bag of oranges.
The rolls I made are not quite similar to the ones we had at the cafe (and I didn’t particularly try to re-create the same thing). But these rolls are wonderful in its own way; these are soft, buttery, and so flavorful. They make the kitchen smell so heavenly when being baked in the oven, too.
Orange Ricotta Rolls – makes 10 rolls(Adapted from this recipe)
1/4 cup butter
1/2 cup milk
1 teaspoon lemon juice
1/2 cup ricotta cheese
3 tablespoons sugar
1 teaspoon salt
1 teaspoon yeast
1 tablespoon orange peel (peeled skin cooked in boiled water for a minute or so until slightly soft and then chopped)
2 cups all purpose flour
1. Combine butter, milk, and lemon juice and microwave for 1 minute.
2. Whisk in ricotta cheese. Continue to heat in microwave until mixture is 110-120 degrees F.
3. Add yeast, sugar, salt, and orange peel to the liquid mixture and mix well.
4. Add flour. Mix together with wooden spoon, then knead with hands. Form a ball.
5. Place in a oiled bowl and cover with plastic wrap. Set aside in a warm place to rise until doubled, for about an hour.
6. Punch down dough and make 10 balls. Cover and allow to rise about 30 minutes to 1 hour.
7. Bake at 350 degrees F for 25 minutes or until rolls are browned.
