Open-Faced Breakfast Tacos
I used to buy a dozen of eggs every week. But I don’t do that any longer only because consuming 12 eggs a week does not nicely fit in our 95% plant-based diet. But I do buy eggs once in a while particularly when I want to bake something with eggs. That just happened about a few week ago, and there were a few eggs left after I baked a couple of loaves of pound cakes. So breakfast tacos were served for brunch one morning last week. Terry had the scrambled egg version, and I had the poached egg version. One egg for each. I didn’t have to since we still had a full bottle of store bought taco sauce, but I thought it would be fun to make own sauce. Nothing fancy. I just added spices and other things to ketchup.
Open-Faced Breakfast Tacos: corn tortillas, black beans, corn, peppers, tomatoes, green onion, cilantro egg (scrambled or poached) and taco sauce(ketchup, white vinegar, cumin, oregano, paprika, cayenne pepper, garlic powder, onion powder)

以前はほぼ毎週卵1ダース買っていたのですが、最近は卵を買うことがめっきり減りました。
ところが、先日どうしてもケーキに使いたくって、1ダース買ったら、数個残ったので、卵のタコスです。
テリーはスクランブルエッグ、私はポーチドエッグ。
野菜をたっぷりのせて。
タコスソースも市販のものがあったのですが、ケチャップにいろいろ足して、自分で作っちゃいました。
クミン、オレガノ、パプリカ、カイエンペッパー、ガーリックパウダー、オニオンパウダー、酢などなどが入ってます。
