Curry Leaf Soup with Sweet Potato, Lentils, and Kale – Vegan

A few weeks ago when we were at an Indian restaurant for lunch I found wonderfully aromatic soup at their lunch buffet. I liked the flavor but I couldn’t pinpoint what it was. One thing that caught my eye was that there were lots of leaves floating in the soup. At that time I thought they were bay leaves. But then when we were at an Indian grocery store the other day, I found a small package of beautiful leaves, and they looked just like those in the soup! The package said “curry leaves”, and I had to buy them. I did some research on how to use these leaves to flavor soup. For this soup I used both whole leaves and ground leaves. The curry leaves give a very interesting flavor. Surprisingly it’s not similar to the curry spice I’m familiar with. It’s hard to explain, but it’s definitely worth a try.

カレーの葉風味のスープ

具は、きれいなオレンジ色のスイートポテトや、レンズ豆、ケールが入っているのですが、

このスープの主役は、カレーの葉っぱ。

先日インド料理店で食べたスープがとっても美味しくって、その時スープに葉っぱがいくつか浮かんでいたんですよね。

見た目からしてローリエだと最初は勝手に思ったのですが、食べてみると風味が独特で違うのかも、と。

そして、先日インド食料品店に行った時にたまたま、同じような葉っぱを発見！

袋を見てみたら、カレーリーフ（カレーの葉）、と書いてありました。

もちろんお買い上げ～！

インターネットでどうやって使うか調べてみたら、そのままローリエのように葉を丸ごと入れて風味付けをしたり、または、葉っぱを挽いて使う、ともありました。

で、私は両方、丸ごと葉っぱと、葉っぱを挽いたものと両方このスープには入れてみました。

カレーの葉、というものの、いわゆるカレーの香りとはちょっと違うんですよね。

なんとも説明しがたいですが、個人的には好きな風味です。

マスタードシードやら、クミンやらも入って、独特な味のスープとなりました。

初めての食材ってわくわくします～。
