One Pot Salmon Coconut Curry Pasta

When I first saw this idea of cooking pasta with all other ingredients in a pot I was intrigued! It just seemed such a fun thing to try. I looked at several different sites for recipes but I was particularly inspired by this site to make my salmon coconut curry version. I wasn’t very sure about adding a large piece of salmon but it was cooked perfectly at the same time the pasta was ready. I think by cooking them all together I ended up with wonderfully flavored creamy sauce.

One pot wonder salmon coconut curry pasta:
12 ounces linguine
3 cups water
1 can coconut milk
2 vegetable stock cubes
2 cloves garlic, thinly sliced
1 Onion sliced
8 mini orange and red peppers sliced
15 grape tomatoes cut in half
0.8 pound salmon
2~3 tablespoons Indian curry paste
1 tablespoon canola oil
1 bay leaf
a bunch of parsley
a bunch of cilantro
1 tablespoon sugar
salt
pepper

Place all ingredients in a pot. Cover the pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 17 minutes, stirring a few times. Cook until pasta is al dente. Season with salt and pepper.

お鍋にパスタ、水、その他の材料をぜ~んぶ投入して調理する、という大胆なこのパスタ料理。

水切りをしたり、とかいう手間なし!

私のこのバージョンは、水のほかにココナッツミルク入り。

サーモンも、ちょっと大胆かな、と思ったものの、小さく切らずに生のままでそのまま投入。

パスタと一緒に調理されたことでサーモンのエキスが美味しいソースの秘訣になったかも。
