Fried Zucchini Noodle
Fried noodle was always one of my favorite weekend lunch options when I was growing up in Japan. It’s easy to make and I could even make it myself when I was in 2nd grade (or maybe 3rd)! A few weeks ago I was in a mood for fried noodle but unfortunately there is no place nearby where I can get the certain type of noodle I like for my fried noodle. And I wasn’t gonna drive for a half hour to get to the Asian store. So I had to be a little creative. I looked in my fridge and I decided to make my fried “noodle” with zucchini! I cut zucchini into long strips like noodle. I consumed two whole zucchini this way!
Fried zucchini noodle: canola oil, cabbage, onion, zucchini noodle, salt, pepper, yakisoba sauce, beni(red) ginger, seaweed, green onion, katzuobushi (dried fish flakes), fried egg

焼き“ズッキーニ”そば
以前ズッキーニをスパゲッティに見立てた料理を作りましたが、今回は中華そば風に使ってみました～。
先日どうしても焼きそばが食べたくなったのですが、近くに中華そばを売っている店がないので、たまたまうちにあったズッキーニを麺風に細切りにしました。
具はキャベツと玉ねぎ。
ズッキーニそばを入れてさらに炒めたら、鰹節とソースをからめて、紅ショウガ、海苔、小ねぎを散らして出来上がり。
あっ、そうそう、目玉焼きものせてましたね。
一人でかる～くズッキーニ2本ぺろっと食べてしまいましたよ～。

ズッキーニパスタ、おいしそう。いまサンタモニカにいるんですが、2年前にはなかったWholefoodsにズッキーニパスタが登場していておおー！と思いました。結構定着しているんですね～
