Cardamom Orange Apricot Cookies (Vegan)

When we were at the organic raw restaurant, Ecopolitan, in Minneapolis about a week ago, our server told us about their “cardamom orange cookies” as a dessert choice. We went for a different dessert, but the flavor combination sounded so good. So I decided to make cookies with this combination this weekend. I also added apricot to my cookies. Mine are not raw but they are vegan. These cookies are rather soft. I could make them a little harder, but Terry likes his cookies this way.
Cardamom Orange Apricot Cookies (vegan) (modified from “Vegan with a Vengeance” cookie recipe)
(makes 3 dozen cookies)
1/2 cup canola oil
1/4 cup plus 2 table spoons agave syrup
1 teaspoon vanilla extract
3/4 cup sugar
1/4 cup soy milk
2 tablespoons cornstarch
1 1/2 cups all purpose flour
3/4 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon ground cardamom
orange zest (from two oranges)
1 cup chopped dried apricot
1/2 cup chopped walnuts
Preheat oven to 350F.
1. Combine the oil, syrup, vanilla, sugar, milk, and corn starch until the corn starch is dissolved.
2. Add flour, salt, baking soda, cardamom, orange zest until well combined. Fold in the chopped apricot and walnuts.
3. Drop by tablespoonfuls about 2 inches apart onto the prepared cookie sheets. Bake for 10 minutes.

なんとも長い名前になってしまったけれど、どうしてもフレーバーを全部書き出したくって。
どれも欠かせないのです~!
カルダモン、オレンジ、アプリコット、と~っても美味しい組み合わせとなりました。
カルダモンはなんとも異国風な風味。
そして、さわやかなオレンジ風味に、甘酸っぱいアプリコット。
ぽりっとした食感を出すために少しくるみも入れました。
テリーにも大好評!
私もかなり気に入りました。
これももちろんヴィーガンなので、バターや牛乳が入っていません。
ちょっと柔らかめなアメリカンクッキーです。
私はもうちょっと硬めでもいいのですが、こういう柔らかいクッキー、テリーの好みなんです。
