Corn Scallion Pancake Brunch

This was my first attempt to make scallion pancakes. The great thing about this pancake is that you don’t really need any special ingredients. All you need is flour, water, scallion, and sesame oil (I added corn). The pancakes turned out great. I used a generous amount of oil to fry, so my pancakes were crispy outside but the inside was still nice and chewy. Because of the way you roll the dough, many layers were created inside the pancakes, and I loved the texture.

The pancakes were delicious by themselves, but for brunch I decided to decorate them a little bit. I placed roasted chicken, scrambled egg, sauteed cabbage on a pancake for Terry, and for myself I placed a poached egg and sauteed cabbage. The sauce was a mixture of Hoison sauce and soy sauce.

こちらのサイトで拝見してすぐに作ってみたくなったのが、葱油餅。

胡麻油に葱味っていうのもそそられるし、しかも材料はうちにあるものばかり。

早速日曜日のブランチに作ってみた。

私は葱の他にコーンも足して。
油をちょっと多目にして揚げるように焼いたので表面はぱりっと、でも中はもちっとした焼き上がり。
中はちゃ～んと層になっていて嬉しくなってしまった。
次回はレシピ通りふたをして焼いて違った食感を楽しみたいと思う。

そのまま食べてもとっても美味しいのだけれど、ブランチ用には卵をのせて。

テリー用には、炒めたキャベツ、卵焼き、チキン、そして、Hoisonソース（海鮮醤）を醤油でのばしたタレをかけて。
自分用には、炒めたキャベツ、ポーチドエッグ、そして同じタレをかけて。

テリー、“美味しい、美味しい”、って二枚も食べてくれた（嬉）。

葱油餅は一口サイズのミニ版も作ったので午後にはスナックなぞも作ってみた。
