Cinnamon Buttered Crepes with Dulce de Leche

A few weeks ago I took Terry to a Mexican restaurant in Minneapolis for his birthday dinner. I really liked their buttered crepes we had for dessert, and I wanted to recreate it at home. I actually changed many things in my version, and it’s quite different from what we had at the restaurant except that these are buttered crepes.
In my version the baked crepes were sauteed with butter, cinnamon and brown sugar, and then served with rum whipped cream, dulche de leche, and chopped pecan nuts. Terry said this was better than the restaurant’s, and that made me super happy, although I know he is probably a bit biased (lol).
By the way I used Julia Child’s recipe from “Mastering the Art of French Cooking” for crepes. It’s absolutely wonderful!

クレープのバターソテー、ドルチェデレチェがけ

数週間前、テリーの誕生日に行ったおしゃれなメキシコ料理の店でデザートに頼んだクレープが美味しかったので、ちょっと真似してみたのがコレ。
私バージョンはこんな風。。。
焼いたクレープは筒状に丸めたらバター、ブラウンシュガー、シナモンを入れたフライパンでソテーする。
お皿に盛って、ラム酒を入れたホイップクリームをのせたら、ドルチェデレチェ(コンデンスミルクをことこと煮てミルクキャラメル状にしたもの)をかけて、ピーカンナッツを砕いたものをふりかけたら出来上がり。
いつものように焼いたクレープをさらにたっぷりのバターでソテーするのがコツ。
私バージョン、クレープをバターで焼く以外はお店のとはかなり変わってしまったけれど、テリーは、“店のより美味しい”、と言ってくれた(嬉)。
バターに、シナモンに、ラム酒に、キャラメルソース。。。テリーも私も好きなものばかり。
この組み合わせは美味しくないわけがないよね(笑)。
ちなみにクレープ自体は、ジュリア・チャイルド(映画、“ジュリー・アンド・ジュリア”に出てきたアノ有名な料理研究家)のレシピ。
ものスゴイお気に入り。

これは、美味しくないはずがないというか「絶対美味しいでしょ!!!」という一品。
でもクレープなどにそこまで手をかけない私からしてみたら「コンデンスミルクをコトコトキャラメル煮てキャラメル状にしたもの」の説明を読むだけで気が遠くなりかけます(笑)
私にはメープルシロップという味方がいるではないか!と(爆)
でもクレープにナッツ類やシナモンやちょっとリッチなジャムは美味しいですよね。
シナモンやシトロン風味、この季節はいいですね。

うちの近く、美味しいデザートを買いにいける店が少ないんですよ。

コンデンスミルク、今回は缶を開けたものが残っていたので、煮込みましたが、缶を開けてないものだったら缶ごと熱湯に入れてことこと煮込むだけでも出来るんですよ~。
クレープいろいろなものをあわせるの面白いですよね。
メープルシロップがけも大好きです☆

Did you make the dulce from scratch using goat’s milk or did you buy the canned variety? Or, did you caramelize sugar and add cream? I bet you went to Masa, I think I remember that from their menu. They look good.

Yes! We went to Masa. To make dulce de leche I used condensed milk and cooked it until it was caramelized. My husband and I loved their appetizer and dessert dishes. What was your experience at Masa?

We have not been to Masa for about 1 year, but we did like it. I love tasting the different sauces and salsas on the appetizer menu. I love mole! We have a culinary expert from Mexico on our staff and she has given me several of her favorite mole recipes. Since you and Terry love food as well, we should make an effort to go out and check out new restaurants. We’ve tried Nectar Bistro in downtown Osseo (he used to run Kay’s Wine Bar & Bistro in Maple Grove). We don’t care for the atmosphere and the server’s are not knowledgable, but he is a good cook—though he could use lots of advice on how to improve the menu, experience and service! Marty and I are usually available weeknights except Fridays.

Hi neighbor! Lori, sorry I didn’t recognize you yesterday. Terry and I went to Kay’s in MG once. We were thinking about going back and then soon we found out they were closed… I didn’t know anything about Nectar Bistro. I should definitely try it. We like exploring and supporting local restaurants. We’d love to try different restaurants with you guys. That would be fun! Maybe we can set up something when Terry is not traveling so much.
