Butternut Squash and Quinoa Tacos

Gradually we are going back to our 95% plant based diet after consuming so many Christmas cookies that Terry’s aunt generously gave us. Here is our lunch yesterday. These tacos are almost vegan. I say “almost” because there is mayo in them. I’ve been suffering from winter allergies the past few weeks, and my senses (taste and smell) are not great right now, but I still enjoyed them. The key is flavoring the butternut squash well with spices. I like quinoa in anything, but I really enjoyed its texture in tacos as well.

Butternut Squash and Quinoa Tacos: roasted butternut squash and cooked quinoa sauteed together and flavored with cayenne pepper, garlic powder, onion powder, cumin, dried oregano, salt, and pepper, pico de gallo (tomatoes, red onion, diced green chili pepper (canned), cilantro, salt), spicy lime mayo (mayonnaise, lime juice, sugar, Louisiana hot sauce, salt), cilantro, lime juice

まったく年末気分が盛り上がらないアメリカ。

で、それを表すように、今日ご紹介は週末に作ったタコス（年末全然無視（笑））。

明日３１日の夜１２時になるとシャンペンとキス、ハグで、お祝いするんだけれど、なんだかその一瞬で終わり、という感じ。

１日はお休みなのだけれど、特にイベントもなし、ということで、日本人の私としては、何年たってもやっぱり何となく落ち着かない今日この頃なのです。

が、クリスマスも終わってここにきて食生活はようやく９５％植物性食生活に戻ってきた感じ。

このタコスもマヨネーズをのぞいたら、１００％ヴィーガンでした～。

ローストして少し甘目なバターナッツスクオッシュとキノアをタコスっぽくちょっぴり絡めなスパイスで味付けしたら、ピコデガヨ（トマト、玉ねぎ、チリペッパー、香菜）、ライムスパイシーマヨと合わせて出来上がり～。

仕上げにきゅっとライムを絞ってね。

最近（室内）花粉症にやられていて鼻がつまり気味で味覚がイマイチなのだけれど、テリーにOKをもらったのでよし、ということで。

Mushroom Balls

After cheating(!) for a few weeks, I think I’m ready to go back to my 95% plant-based diet. Since I got a lot of beautiful mushrooms from an Asian grocery market, I decided to make vegan “meat” balls with them. Steam them first and then fry in a pan, which will make them crispy outside but keep the inside nice and juicy. (I was not able to brown them all around, because I was afraid they would stick to the pan. I really need to get a non-stick pan!!)

Mushroom balls:

1~2 tablespoon salad oil
1 onion chopped
2 cloves garlic chopped
about 4 cups of various mushrooms sliced (I used the following)
1 cup shiitake mushrooms
1 cup oyster mushrooms
1 cup king oyster mushrooms
1 cup fresh fungus (kikurage mushrooms)
salt pepper
1/3 cup hemp seeds
corn starch
flour
1~2 tablespoon salad oil

1. Cook garlic, onion, and mushrooms in oil.
2. Process in a food processor.
3. Salt and pepper.
4. Add hemp seeds. Add corn starch until the consistency feels right.
5. Make balls.
6. Steam them in a steamer for 6~7 minutes.
7. Dust with flour.
8. Cook them with salad oil in a pan until browned.

きのこ団子

久々にヴィーガン料理の気分。

で、先日いろいろな種類のきのこを手に入れた時に、こんなきのこ団子を作ってみました。

ミートボールみたいだけれど、肉なし、卵も入らないヴィーガンです。

しいたけ、オイスター、キングオイスター、しめじ、そして、きくらげがたっぷり入ってます。

蒸してから、さらに、焼いたことで、外はかりっと、中はジューシーな出来上がり～。

今回はフライパンにくっつきそうなのが怖くって全体をこんがり焼けなかったのが残念。

やっぱりノンスティックフライパン、欲しいなあ。

ちなみに、ぷちぷちとした見た目と食感なのは、ヘンプシードという種。

ちょっと値段が高めですが、大好きな種で、常備してます。

サラダなんかに入れても美味しいんですよ。

Kimchi Miso Soup with Root Vegetables

Since I didn’t make any Christmas dishes this year, I took a little break from the blog. As Christmas was in the middle of the week it seemed to come and go so quickly this year. Here is kimchi miso soup I made a few weeks ago when I wanted something that would warm up my body when it was 1 degree (F) outside. I like regular miso soup, but by adding a few other things you can make miso soup taste so much better. Kimchi and kochujang are a few of my favorite things to add to my miso soup. Along with sugar they create the “umami” flavor.

Kimchi Kiso Soup with Root Vegetables: canola oil, carrots, daikon, sweet potatoes, water, vegetable base, Japanese red (dark) miso, Kochujang, cane sugar, soy sauce, dried crushed red pepper, chopped kimchi cabbage, salt, pepper, dried red pepper, green onion

根菜でキムチ味噌スープ

今年はクリスマスっぽいものをなんにも作らなかったので、ちょっとブログをお休みしてました。

載せるものがなかったということですね（笑）。

だって、クリスマス、週のど真ん中だったんだも～ん、というのが言い訳です。

で、クリスマスも無事終わったので、全然クリスマスらしくないものをそろそろ載せてもいいかな、ということで、こんなスープ。

サツマイモが入っているので、柔らかな甘さが美味しいスープです。

キムチやらコチュジャンが入っているので、辛みや旨みがしっかりでたスープとなりました。

Date and Apricot Quick Bread

I was thinking about making a fruit cake for this holiday season. I’ve read somewhere that the fruit cake is the most unwanted sweet gifts during the holiday season. So I know fruit cakes is not for everybody but I happen to love (well-made) ones. This weekend I was in a mood for a fruit cake, but I realized I would have to start soaking dried fruits first and it would be at least several days before I could actually bake one. So I decided to make a quick bread with lots of dried fruits and nuts. I packed dates, apricots, golden raisins, and walnuts in this bread. A hint of orange gives the whole bread even more flavorful. This is going to be perfect for tomorrow’s Sunday brunch!

Date and Apricot Quick Bread

1 cup dates (cut into four pieces)
1 cup apricots (cut into four pieces)
1/3 cup golden raisins
8 tablespoons salted butter, softened
2/3 ~ 3/4 cup sugar
1 large egg
2 tablespoons of orange rum
1 cup all purpose flour
1/2 cup whole wheat flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 ~ 1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup walnuts (chopped into small pieces)

1. Place dates, apricots, and raisins in a bowl and pour over 1 cup of boiling water. Mix and set aside for 1 ~ 2 hours. Drain. Add two tablespoons of orange rum and mix well. Set aside.
2. Preheat oven to 350F.
3. Cream butter. Add sugar and mix well.
4. Add an egg. Stir in flour, baking powder, baking soda, and spices and mix.
5. Add fruit with liquid and walnuts and mix.
6. Pour into a 5X9 pan and bake for about 60 to 70 minutes until a skewer inserted in middle comes out clean.

デーツ＆アプリコットブレッド

ブレッドと呼んでますが、甘目、バナナブレッドみたいな感覚だと思ってください。

でもふわっとしたケーキとはまた違うので、やっぱりブレッドと呼びたいのです。

ぎっしりとデーツ、アプリコット、ゴールデンレーズン、くるみが詰まって、美味し～い。

本当はフルーツケーキを作ろうと思ったのですが、それには、ドライフルーツを洋酒に漬けないといけないことを忘れていて、

でも、すぐに食べたいことから、こんなブレッドが出来上がり。

ほんのり忍ばせたオレンジラム酒がいい味を出してくれます。

おやつにはもちろん、来週朝通勤用に持っていく予定で～す。

朝は本当は甘いものを控えようと思っているのですが、これはフルーツやナッツがたっぷりだからいいよね、というのが言い訳（笑）。

Mushroom Arugula Pasta

I had to make this pasta after picking up beautiful mushrooms at the Asian grocery store I had just recently discovered in our new neighborhood. I got oyster mushrooms, shiitake mushrooms, enoki mushrooms, and king oyster mushrooms. I’ve seen other grocery stores selling enoki mushrooms, but they are always so dry looking and I never dared to buy them. Here their mushrooms look so fresh and I’m glad that I now know where to go for mushrooms and other fresh produce (and their prices are very reasonable).

This is a simple pasta dish. You really don’t need to add much when you have fresh tasty mushrooms like these. Fresh arugula and crunchy panko toppings are all you need!

Mushroom arugula pasta: cooked pasta, olive oil, garlic, various kinds of mushrooms, white wine, salt, pepper, fresh arugula, panko (cook with olive oil in a pan until browned and crunchy)

いろいろマッシュルームとルッコラのパスタ

新居の近くにこれまた見つけたのは、アジア食料品店。

新鮮なきのこをいろいろ手に入れたので、早速ランチにしてみました。

えのきやシイタケなんて食べたのは何年ぶりかしらん。

きのこ実は私大好きなんですよね～。

９５％植物性食生活にぴったりなこともあって、これからもっと摂っていきたい食材です。

ごちゃごちゃと味付けせず、きのこのおいしさをストレートに出したくって、シンプル～な一品です。

オリーブオイルでにんにくを炒めたら、そこにきのこを入れて、白ワインをじゅ～っと入れて少し煮詰めたら、塩こしょう。

これを茹でたてパスタにどばっとかけて、フレッシュなルッコラをわさっとのせて、仕上げに、オリーブオイルでかりっと炒めたパン粉をトッピングにして出来上がり。

好みで、食べる直前にオリーブオイルをまわしかけても良し。

今回使ったきのこは、シイタケ、えのき、オイスター、キングオイスターです。

ルッコラ、お好きな方、サラダだけじゃなくって、こんな風にパセリのかわりにいろいろな料理の仕上げに使うのもお勧め。

Pumpkin Bread Pudding with Bourbon Sauce

Bread pudding was never my favorite. Every time when I was in a situation where I had to try a bite, I would sigh and I was like “yep, I knew it”. Then I ran into this wonderful recipe several years ago and since then I make my bread pudding only with croissants. I usually add chocolate, but this time I decided to make it pumpkin flavored. You know, at this time of the year you want to use pumpkin in everything! This bread pudding turned out to be dangerously delicious (lol). I forgot that I usually make this in a smaller (9×9) pan, and this time I ended up with a large panful. Every night this week I’ve been telling myself “today I will wrap up the rest and freeze it”, and then I find myself eating not only one but often two (large!) pieces. (I finally put away the last four pieces in the freezer.) This bread pudding is very good when warm, but it tastes so much better when it’s at a room temperature or cold. Served with Bourbon sauce.

Pumpkin Bread Pudding (9×13 pan)

1 stick salted butter
1 cup sugar
1 1/2 teaspoons ground cinnamon plus some more for sprinkling
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 ground clove
1 teaspoon vanilla extract
1 teaspoon Bourbon
5 large eggs
2/3 cup pureed pumpkin
2 1/4 cups heavy cream
12 small croissants
1/2 cup Craisins
1/3 cup unsweetened chocolate, shaved

Bourbon Sauce (for 3~4 servings):

About 3 tablespoons cane sugar
1/2 cup Bourbon
1 tablespoon butter
a pinch salt

1. Preheat oven to 350 degrees F.
2. Combine butter and sugar in a food processor and process until well blended. Add the spices, vanilla, and Bourbon, and pulse to combine.
3. Crack 5 eggs into the mixture and mix.
4. Add pumpkin puree and heavy cream and mix.
5. Lightly butter a 9 by 13-inch baking dish. Break up croissants into 1-inch pieces and place in the pan. Scatter the Craisins and and mix. Pour the egg mixture over the croissants. Soak 10~15 minutes. Sprinkle shaved chocolate and cinnamon.
6. Cover with foil and bake for 35 minutes. Remove foil and bake for additional 10 minutes to brown the top. Allow to cool. Serve with Bourbon sauce*.

*To make Bourbon Sauce

1. Combine sugar and Bourbon in a small pot.
2. stir and cook for a few minutes over medium heat until sugar dissolves.
3. Remove from heat. Add butter and salt, and stir. Allow to cool for a few minutes until the sauce becomes slightly thick.

パンプキンブレッドプディング

ブレッドプディング、外では手を出さないデザートなのですが、自分で作るのは美味しい（笑）。

というのも、私はブレッドプディングはクロワッサンで作る、と決めているから。

バターたっぷり、生クリームたっぷり、美味しくないわけがないのです（笑）。

今回はパンプキン味にしてみました。

やっぱりこの時期はなんでもパンプキン味にしたくなるんですよね～。

私、このブレッドプディング、危険すぎるほど好きでした（笑）。

あまり考えず作っていたら、いつもより大量にできてしまい、

でも、余ったら冷凍すればいいわ、と思っていたのですが、

毎晩２切れずつ食べる勢いで、困りました。

今回はバーボンソースを添えましたが、これが、テリーに好評でした（ソース好き☆）。

ソースナシでも美味しいのですけどね～。

今日ようやく最後の４切れを冷凍しました。

５切れサランラップで包んだあと、一つまた開けて食べてしまいました。。。
