Tofu Patties – vegan
We had a big family get-together yesterday. We were supposed to bring some dishes to share and also what we wanted to cook on a grill. Terry and I try to stay with our plant-based diet as much as possible but I don’t mind derailing a little on an occasion like this. I made these tofu patties to keep in our freezer for a future quick lunch or snack, and since I ended up with so many of them, Terry wanted to take these to the party. I was rather against it. I pictured Terry eating a tofu burger in the middle of all his cousins eating big beef burgers. I said to him, “Honey, you’ll be teased!” But he didn’t care. So we brought two of these tofu patties to the party. I guess nobody noticed we were eating no-meat burgers. They probably looked more like turkey burgers. (we brought cooked ones so we didn’t grill them. We just warmed them up in the microwave oven.)
The texture of these patties are very different from that of other vegan burgers, let’s say black bean burgers. I don’t know how to describe it, but it’s s lightly chewy and not so “beany”. It’s nice to have different vegan burger options. Another thing I like about this patties is that while the outside of the patty is crispy, the inside stays moist. I list the recipe below. This is the basic, and you can add quinoa, corn, herbs, or vegetables if you like.
Tofu patties (makes 12 small patties):
2 firm tofu – tear with hands into small pieces, cook in boiled water, dry, then mash
2 garlic cloves – cooked and mashed
1/2 teaspoon grated ginger
2 potatoes – grated
1/2 cup green onion – chopped
1/2 cup flour plus more for dusting
1 tablespoon soy sauce
salt and pepper
2 tablespoons canola oil
1. Combined all the ingredients except for canola oil.
2. Make patties.
3. Dust with flour on both sides.
4. Cook both sides with canola oil in a pan, for about 3 to 4 minutes each side.

豆腐ハンバーグ
豆腐入りハンバーグではなく、
豆腐が主役で肉や卵が入らないヴィーガンハンバーグです。
豆腐のほかには、じゃがいものすりおろしが入って、もちっとした食感がなかなかいい感じ。
外はぱりっと、中はジューシーに仕上がりました。
今回はハンバーグとしていただきましたが、沢山作ったので、今度はハンバーガーにしてみようと思ってます。
実は昨日親戚の集まりがありました。
持ち寄り料理のほかに、グリルしたいものを持ってきてね、と言われたので、
我が家はこの豆腐ハンバーグを持参。
グリルはしませんでしたが(既に調理済なので)電子レンジでチン。
グリル、というと、もちろん他の人は(肉の)ハンバーグやホットドッグ、チキンなどを持参。
私、実は豆腐バーガーを持っていくのは反対だったんですよね。
“まわりみんなが、肉ハンバーガーを食べてる中で、豆腐バーガーなんか食べてたら、テリー、からかわれるよ~”、って言ったのですが、
テリー、全然平気(笑)。
何も言われなかったのは(テリー、多分言われても平気なのですが(笑))、多分見た目は鶏肉バーガーみたいに見えたからかもしれません。
他にも、ピタパン、フムス、サラダ二種(一つはコチラ)を持っていったので、パーティーでもほぼヴィーガンで済ませることができました(デザートはついついいろいろつまんでしまったのだけどね。。。)。
ちなみに私が持っていくつもりで作ったデザートはちと訳アリで持参ならずでした。。。
