BBQ Pork Mango Sandwich

I can’t believe there are still so many beautiful fresh mangoes at the grocery store. Because I remember the mango as a tropical fruit, I tend to associate it with a hot summer, so it seems a bit awkward to see them around this time of the year. But they are not only beautiful and delicious but also the price is amazing, so I continue to buy them.

Here is the sandwich I made a few weekends ago: BBQ Pork Mango Sandwich. The freshness and the natural sweetness of the mango goes very well with BBQ pork.

BBQ Pork Mango Sandwich: cooked pork (BBQ sauce + pickapeppa sauce), red onion slices, mango slices, sprouts, cheese (mozzarella and cheddar), whole wheat mini buns

マンゴーっていったらトロピカルフルーツのはず（だよね）なのに、北風が舞うこの時期になっても出回っているっていうのがちと不思議。

でも甘くってとにかく安く売っているので、ついつい買ってしまう。

このサンドイッチは数週間前に作ったもの。

市販のBBQソースとピッカペッパソース（pickapeppa sauce：お勧め）というソースを混ぜたもので豚肉をあえたら、マンゴー、赤玉、スプラウツ、チーズ（バンズにのせて少し溶けるまで温めておく）と一緒にバンズにはさんだら出来上がり。

マンゴーのなんともいえない甘さとBBQ味の豚肉がマッチして美味しい。

マンゴー、我がブログではもう数回登場しそう。。。

I had a wonderful surprise last week. My sister-in-law gave us beautiful pears from her backyard. Being able to get fresh fruits from your own backyard? How great is that! I wish we had some fruit trees in our yard, too. Anyway I made this pear almond tart using those pears. I used this recipe. Highly recommended.

義妹が、裏庭でとれたという洋梨をいくつかもってきてくれた。

タルトにして、というのは、テリーのリクエスト。

洋梨タルトのレシピ、洋梨は缶詰のものを使うのが簡単、というのを横目に見ながら、洋梨は皮をむいてコンポートにする作業からはじめ。。。

今回はタルトも生地からちゃんと作ったので、少し時間がかかったけれど、やっぱり手作りすると美味しい。

タルト生地にもフィリングにもアーモンドプードル入り。

バターたっぷり、リッチな焼き上がり。

それにしても裏庭で洋梨がとれるなんていうのがうらやましい。。。

I enjoy visiting Costco, particularly on the weekend. It’s always fun to try different new food products and they offer so many of them on the weekend. On good days when there are lots of interesting things, I end up trying so many, and then I have to skip a meal afterwards (lol). Anyway, a few weekends ago Terry and I tried Mushroom Bisque and we really liked it. It was pretty tasty for an instant food, and we decided to buy a box. It comes in a powdered form and you just need to add half&half, mix well, and heat up. I added sauteed mushroom, farfalle pasta, and chopped parsley. It was a perfect quick, easy, and satisfying lunch.

週末にたいてい訪れるコストコ。

楽しみの一つは、試食（笑）。

５メートル歩くごとに試食があって、調子に乗っていろいろ試していると昼食代わりになったりする（苦笑）。

で、先日、試食したマッシュルームビスクがインスタントにしてはかなり美味しかったので、一箱お買い上げ～。
（売り場での試食は大幅な売り上げにつながる、という話を聞いたことがあるけど、納得。）

粉末の袋がいくつか入ったもの。

ハーフアンドハーフ、または牛乳を加えて混ぜて加熱するだけ。
超簡単。

週末昼食は、これにパスタ、ソテーしたマッシュルーム、パセリのみじん切りを入れて出来上がり。

インスタントものもこんな風に少し手を加えるのが好き。

Terry surprised me by getting us a new waffle maker last weekend! As the reviews suggested, this waffle maker is awesome! Look at these beautiful waffles. I love it. I used the recipe that came with the waffle maker. Corn meal and oats were added to the batter as well as whole wheat flour.

先日仕事から帰ってきたら、テリー、なんだかとってもわくわくして、”今日は自分たちにプレゼントを買いに行く”、とのこと。

一緒に行く？と聞かれたので、行く、と言ったものの、ギャラリアというショッピングモールに行くと教えてくれるだけで、プレゼントが一体何かは？。

着いた先は、Crate&Barrel、というキッチン・インテリア用品のお店。

冗談で（つい最近ワッフルメーカー買ったばっかりだったので）、”新しいワッフルメーカー？”と聞くと、なんと当たり～！！

ポケットから出して見せてくれたのは、先日買ったばっかりのワッフルメーカー返品レシート！
なんとすでに返品もしてたらしい（笑）。

で、こんな立派なワッフルメーカーを買ってしまった。

で、新しいワッフルメーカーで作ったのがこれ。
説明書についていたレシピで作った全粒粉入りワッフル。

すっごくきれいにできて感激。

先週末は土曜日日曜日、と、二日続けてワッフルの朝食。

今週末もまた作るつもり～。

Originally it was chicken and mango salad. Then during the preparation process it evolved into chicken with “GOBS” salad. Broccoli (G: Green), red onion (O: onion), dry cranberries (B: berries) almond slices (S: seeds/nuts), and quinoa (S: seeds) were added to fresh mango and cooked/shredded chicken. “GOBS”チキンサラダ

もともとは茹でたチキンとマンゴーをあわせたシンプルなサラダにするつもりだったのだけれど、途中で、そうだ、”GOMBS”をとらなきゃ（意味がわからない方はコチラを見てね）、ということで、いろいろ入れていくうちに出来上がったのがこれ。

ブロッコリ（G:グリーン）、赤玉（O:オニオン）、ドライクランベリー（B:ベリー）、キノア（S:種（シード））、アーモンドスライス（S:　シード・ナッツ）入り。

さすがに、M(マッシュルーム）は入れなかったけどね～。

We usually stuff this kind of sticky rice balls or “dai-fuku” with black bean paste, but since it is hard to get it here in the US, I decided to use cream cheese instead. Some were stuffed with chocolate and cream cheese mixture and the others were stuffed with raspberry and cream cheese mixture. These were certainly different from the traditional sticky balls but they were delicious! It would be also fun to add some nuts or fresh fruit.

クリームチーズ大福（ラズベリー＆チョコレート）

先日白玉を作ったときに、白玉粉で大福も作れるのよ、とsacchiさんに教えていただいて、早速作ってみた。

いちご大福を作ろう、と思っていたのだけれど、イチゴを買いにいくのも待てず、うちにあったものを詰めて、クリームチーズ大福～！

作ったのは２種類。
一つはチョコレート入り、もう一つはラズベリージャム入り。

大福、おいしかった～。

あんこももちろん大好きだけど、こっちでは日本食料品店でしか買えない貴重品なので、ムリヤリな感じで出来上がったクリームチーズ大福だけれど、なかなか悪くない。

もう少し白玉粉、残っているので、残りもたぶん大福になりそう。

次回は果物やナッツを入れてもいいかも、なんて考えている。
