Marie Biscuit Cake with Rum Chocolate Cream

The basic recipe came from a cake recipe book I had when I was probably 7 or 8 years old. Even at that time I loved collecting baking/cooking books. I enjoyed reading recipes over and over, but I didn’t actually spend much time in the kitchen. My mom was a great cook and baker, and I always felt like the kitchen belonged to my mom (don’t get me wrong. My mom always encouraged me to cook or bake whenever I wanted). One of a few things I actually made myself from those books was this cake. I called it “Marie Cake”, because to make this cake, you have to use this particular brand’s cookies, called “Marie Biscuits” which were found in any grocery stores in Japan. You soak them in milk and stack them while placing chocolate cream between the cookies. When you let it rest overnight, the cookies become very moist, and you wouldn’t know this was made from cookies. It was easy, delicious, and perfect consistently every single time.
When I came to the US, I wasn’t sure where or if I could find “Marie Biscuits”. I wasn’t really looking, because I just assumed they were Japanese and I wouldn’t find them here. Well, one day when I was at World Market, I found this bag of cookies called “Maria Biscuit made in Spain! Maria?? Marie?? Hmmmm. They looked very similar and I decided to use them to make my Marie cake. I later found out that Marie cookies were originally created by an English baker in London and they are now made in many parts of the world. Apparently Marie changed its name to Maria when they came to Spain.
Here is my Marie cake using the Maria biscuits (photo below). Soak biscuits (for a few seconds. they get soft very quickly) in milk coffee. Stack them with rum flavored chocolate cream (whipped cream, chocolate syrup (or melted chocolate), rum, sugar) between the layers. Coat the whole cake with the cream. Let it rest overnight. Serve with sprinkled cocoa on top. I used four cookies to make this individual cake, but you can also make a large cake using more cookies and cut it into individual pieces as well.
This cake is so easy and delicious that I’m thinking about experimenting with different flavored creams as well, such as green tea cream, caramel cream, or even using mascarpone cheese and making something similar to tiramisu. Just thinking about it makes me excited…

焼かないマリービスケットケーキとラム酒風味チョコレートクリーム

人気のケーキ屋さんのレシピ、というケーキの本を子供の頃持っていて、その中からよく作っていたのがコレ、マリービスケットで作るチョコレートケーキ。
マリービスケットを牛乳に浸して、それをチョコレートクリームと順々に重ねていってさらにクリームを全体に塗ったら出来上がり、という超簡単なもの。
一晩寝かせるとビスケットがしっとり柔らかくなって、本当にケーキみたいな歯触りになるのも面白くって。
アメリカに来てから、ずっと忘れていたのだけれど、数年前にある輸入食料品店でマリービスケットに似たものを発見して、また作りたくなった。
見つけたのは、マリーじゃなくって、マリアビスケット!
メイド・イン・スペインって書いてあるし。。。
グーグルで少し調べてみたら、マリービスケットはもともとイギリスで作られたもの。
それが今では世界中で作られているとのこと。
日本へはマリーのまま来たのだけれど、スペインに行ったらマリアになったみたい(笑)。
今回は、牛乳にコーヒーを溶いて、そこにビスケットを浸してみた。
クリームは生クリーム、チョコレート(市販のチョコレートシロップ、又は好みのチョコレートを溶かしたもの)、砂糖、ラム酒で作ったもの。
いつもは一つの層に何枚かビスケットを使って直系15センチぐらいのドーム型のものを作って切り分けていたのだけれど、今回は一人用に一つずつ。
ビスケットは一枚ずつ順々に上に重ねていくだけ。
一つのケーキを作るのに使ったビスケットは4枚。
ぺろっと食べられる大きさ。
もうちょっと食べたいなあ~、というところでなくなる、というパーフェクトサイズだと私は思う(笑)。
テリーにも大大好評!!
今後は、チョコレート味の他にも、抹茶味、とか、キャラメル味、とか、ベリー系とか、ティラミス風、とかもっといろいろ幅を広げていきたいなあ、なんて考えているとわくわくしてくる。
